<p>It has been a while since I&#8217;ve shared an easy, delicious potato side dish. I love these Parmesan Ranch Potatoes. They are very easy to make and the whole family will love them because they are filled with potatoes, bacon, Ranch dressing, and Parmesan cheesy goodness. Who doesn&#8217;t love that?</p>

<p>It takes just over an hour to cook the potatoes, but there isn&#8217;t a lot of prep, just peel and chop the potatoes. You can even peel and chop them in advance! Just put the peeled and chopped potatoes in a bowl of water in the fridge. Make sure the water is covering all the potatoes. When you are ready to cook drain off the water, and pat the potatoes dry with paper towels and you are ready to go.</p>



<h2 class="wp-block-heading">Parmesan Ranch Potatoes</h2>



<h3 class="wp-block-heading">Ingredients</h3>



<ul><li>3-4 large russet potatoes</li><li>3 TBS butter cut into pats</li><li>2 1/2 TBS Bacon Bits</li><li>1/3 cup Ranch dressing</li><li>1/2 cup Parmesan Cheese shredded</li></ul>



<h3 class="wp-block-heading">Parmesan Ranch Potatoes Instructions</h3>



<ol><li>Preheat the oven to 400° F. Spray an 8 x 8&#8243; pan with nonstick spray, set aside.</li><li>Peel the potatoes. Chop the potatoes into small 1/2&#8243; cubes. Place the potatoes in the prepared pan.</li><li>Place the butter pats on top of the potatoes.</li><li>Sprinkle the bacon bits over the potatoes.</li><li>Cover with aluminum foil and bake for an hour, or until tender.</li><li>Remove pan from oven. Remove foil. Pour on the Ranch dressing and the Parmesan cheese. Stir well to coat.</li><li>Place back in the oven, uncovered, for about 5 more minutes, until the cheese is melted.</li></ol>

Ron has been asking me to make my <strong><a href="https://themommaven.com/2016/07/elote-mexican-street-corn/">Elote aka Mexican Street Corn</a></strong> but I haven&#8217;t done it yet. Then last week I decided to create a Mexican Street Corn Casserole to go with our Fajita Chicken. Both recipes were a hit! The Mexican Street Corn Casserole recipe serves 8 people so we had leftovers to enjoy with our steak 2 days later!</p>



<p>Eating Elote can be a messy proposition so turning it into a casserole lets us enjoy the delicious flavors without all of the mess. I&#8217;ll be making this recipe, even when fresh corn isn&#8217;t in season since the main ingredient can be fresh or frozen corn!</p>

<h3 class="wp-block-heading">Ingredients</h3>



<ul><li>32 oz corn, fresh cut off the cob or frozen and thawed</li><li>1/2 cup sour cream</li><li>1/2 cup mayonnaise</li><li>1/4 tsp cayenne</li><li>1/2 tsp garlic powder</li><li>1/2 tsp salt</li><li>1 1/2 tsp chili powder</li><li>6 oz Cojita or Feta Cheese Crumbled (we use Feta because Cojita is hard to find in our stores), divided</li></ul>

<h3 class="wp-block-heading">Instructions</h3>



<ul><li>Preheat oven to 350° F.</li><li>In a large mixing bowl combine the corn, sour cream, mayonnaise, cayenne, garlic powder, salt, chili powder, and half the cheese. Gently mix until combined.</li><li>Pour the mixture into an 8 x 8&#8243; square pan.</li><li>Place the pan in the oven and bake for 35 minutes, until heated through.</li><li>Remove from oven and sprinkle remaining cheese over the top.</li></ul>

<p>Today is Day 27 for us being safer-at-home as much as possible and I&#8217;m tired of cooking! I enjoy cooking but I never realized how much I also enjoy not cooking a few nights a week. Usually I don&#8217;t cook on Sunday, Wednesday, and Thursday nights due to our church and work schedules. Cooking during these crazy times is also a bit of a challenge because you never know what ingredients you can find. Ron&#8217;s new game is- &#8220;I&#8217;ll shop for what I can find and you can just be creative.&#8221; Thanks a lot. That is how I came up with this easy oven roasted potatoes recipe.</p>



<p>We usually don&#8217;t eat a lot of potatoes. Ron loved the potatoes in the <strong><a href="https://themommaven.com/2020/03/barbecue-chicken-sheet-pan-dinner/">Barbecue Chicken Sheet Pan Dinner</a></strong>, so when he was shopping he bought more potatoes. This time we decided to eat them with some steaks which were seasoned with my <strong><a href="https://themommaven.com/2017/06/steakhouse-rub/">Steakhouse Rub</a></strong>. I whipped up this easy oven roasted potatoes recipe with 4 pantry staples: potatoes, olive oil, Lawry&#8217;s Seasoned Salt, and Chili Powder.</p>



<h2 class="wp-block-heading">Easy Oven Roasted Potatoes</h2>



<p>An hour before baking, peel and chop the potatoes into small chunks. Place the potato pieces in a bowl of water for an hour. This helps remove some of the starch from the potatoes and you get a fluffier bite when you eat your potato.</p>

<p>Once the hour is up, preheat the oven to 425° F and line a baking sheet with aluminum foil. Then drain the potatoes well and put them back in the bowl. Pour in 2 tablespoons of olive oil, 1 tablespoon of seasoned salt, and 2 teaspoons of chili powder. Stir the potatoes up well so they are all covered by the spices.</p>



<p>Spread the potatoes on the prepared baking sheet in a single layer, and put them in the oven for 35 minutes. Fifteen minutes into the cooking time, remove the pan from the oven and flip over the potatoes so they cook evenly. Place the pan back in the oven for the remaining 20 minutes.</p>

Over the last year or so I have been working hard to reduce the packaged foods we eat. We all know that packaged foods are filled with salt, artificial colors, and who knows what else. Recently, it&#8217;s been bugging me every time I cooked the boxed noodle dish so, I did something about it. I searched for recipes and tweaked one until we liked it. 										<content:encoded><![CDATA[<p>Since Thanksgiving is right around the corner, I&#8217;ve been on the hunt for different potato ideas. We ALWAYS have mashed potatoes for Thanksgiving, Christmas and Easter at my mom&#8217;s house. I&#8217;m not complaining because I like mashed potatoes but I thought you might want to try something different for your holiday meal&#8230;or any meal for that matter.</p>
<p>These Rosemary &amp; Thyme Smashed Potatoes are time consuming but very easy to make. This recipe feeds 6 but feel free to halve it or double it to meet your needs. I made them the other night to go with some ham and they were a flavorful addition to the meal. Don&#8217;t skimp on the spices when you make this. The recipe says &#8220;to taste&#8221; but I assure you with Rosemary and Thyme you can always add a little more, especially if you are using dry vs fresh.</p>

Then, one day I saw the light of how easy it would be to make my own. I have been making pasta salad my way for years. I taught Jordan to make it and for a long time it was known at family gatherings as &#8220;Jordan&#8217;s Pasta Salad&#8221;. Well, Jordan has been on the road as a missionary for the last 2 years so pasta salad making has been placed on my to-do list again. While I was thinking about making pasta salad for our family Labor Day cookout/pool party, I decided to shake it up a bit and create a pasta salad bar. This way each of us could choose what we wanted in our pasta salad. This dish is simple to make and there are seldom leftovers!</p>

I like that they are veggie pasta and a bit healthier than regular pasta.</p>

										<content:encoded><![CDATA[<p>I have found my new favorite way to make potatoes! OMG! This recipe is easy and delicious. I made it with my <strong><a href="http://themommaven.com/2013/08/easy-crockpot-chicken-recipe/">Easy Crockpot Chicken</a></strong> but it would pair well with just about any meat. Since this recipe takes some time in the oven, I think it would work best with a crockpot or grilled meat but either way these potatoes are so flavorful you are going to want to pin and/or print this recipe so you won&#8217;t lose it.</p>

Let&#8217;s be honest though, sometimes corn can get boring, especially if you eat it often. I like to find ways to freshen corn up a bit. In the past I&#8217;ve shared my <strong><a href="http://themommaven.com/2013/03/pinterest-recipe-kicking-corn/">Kickin&#8217; Corn</a></strong>, <strong><a href="http://themommaven.com/2013/08/easy-corn-salad-recipe/">Corn Salad</a></strong> and my <strong><a href="http://themommaven.com/2014/08/easy-recipes-mexican-grilled-corn/">Mexican Grilled Corn</a></strong> recipes with you. This week I bring you Skillet Corn. This recipe can be made year round because you can use fresh off-the-cob corn or defrosted frozen corn.</p>

I realized there were two different types of recipes so today I am sharing this one which uses diced potatoes and olive oil vs the other one, which I will share soon which uses halved potatoes and butter. <p>I served the potatoes with steak and salad and they were a nice addition to our meal. The key is to check the potatoes to make sure they are cooked through, just like a baked potato. These Parmesan Garlic Roasted Potatoes are easy for even a beginner to pull off but it looks and tastes impressive.</p>

A few months ago I found a pin for &#8220;<a href="http://pinterest.com/pin/94575660896465477/" target="_blank"><strong>Delicious Cream Cheese Corn</strong></a>&#8221; from BudgetSavvyDive.com and I pinned it to my &#8220;<a href="http://pinterest.com/mommaven/recipes-i-want-to-try/" target="_blank"><strong>Recipes I want to Try</strong></a>&#8221; board on Pinterest. I&#8217;ve made the recipe a few times an, of course, I have tweaked it a bit to suit our tastes. I realized that I hadn&#8217;t shared it with you, so here goes!</p>

<li>Stir often until the butter and cream cheese has melted and the corn is heated through.</li>
