<p>It has been a while since I&#8217;ve shared an easy, delicious potato side dish. I love these Parmesan Ranch Potatoes. They are very easy to make and the whole family will love them because they are filled with potatoes, bacon, Ranch dressing, and Parmesan cheesy goodness. Who doesn&#8217;t love that?</p>

<p>It takes just over an hour to cook the potatoes, but there isn&#8217;t a lot of prep, just peel and chop the potatoes. You can even peel and chop them in advance! Just put the peeled and chopped potatoes in a bowl of water in the fridge. Make sure the water is covering all the potatoes. When you are ready to cook drain off the water, and pat the potatoes dry with paper towels and you are ready to go.</p>



<h2 class="wp-block-heading">Parmesan Ranch Potatoes</h2>



<h3 class="wp-block-heading">Ingredients</h3>



<ul><li>3-4 large russet potatoes</li><li>3 TBS butter cut into pats</li><li>2 1/2 TBS Bacon Bits</li><li>1/3 cup Ranch dressing</li><li>1/2 cup Parmesan Cheese shredded</li></ul>



<h3 class="wp-block-heading">Parmesan Ranch Potatoes Instructions</h3>



<ol><li>Preheat the oven to 400° F. Spray an 8 x 8&#8243; pan with nonstick spray, set aside.</li><li>Peel the potatoes. Chop the potatoes into small 1/2&#8243; cubes. Place the potatoes in the prepared pan.</li><li>Place the butter pats on top of the potatoes.</li><li>Sprinkle the bacon bits over the potatoes.</li><li>Cover with aluminum foil and bake for an hour, or until tender.</li><li>Remove pan from oven. Remove foil. Pour on the Ranch dressing and the Parmesan cheese. Stir well to coat.</li><li>Place back in the oven, uncovered, for about 5 more minutes, until the cheese is melted.</li></ol>

<p>Today is Day 27 for us being safer-at-home as much as possible and I&#8217;m tired of cooking! I enjoy cooking but I never realized how much I also enjoy not cooking a few nights a week. Usually I don&#8217;t cook on Sunday, Wednesday, and Thursday nights due to our church and work schedules. Cooking during these crazy times is also a bit of a challenge because you never know what ingredients you can find. Ron&#8217;s new game is- &#8220;I&#8217;ll shop for what I can find and you can just be creative.&#8221; Thanks a lot. That is how I came up with this easy oven roasted potatoes recipe.</p>



<p>We usually don&#8217;t eat a lot of potatoes. Ron loved the potatoes in the <strong><a href="https://themommaven.com/2020/03/barbecue-chicken-sheet-pan-dinner/">Barbecue Chicken Sheet Pan Dinner</a></strong>, so when he was shopping he bought more potatoes. This time we decided to eat them with some steaks which were seasoned with my <strong><a href="https://themommaven.com/2017/06/steakhouse-rub/">Steakhouse Rub</a></strong>. I whipped up this easy oven roasted potatoes recipe with 4 pantry staples: potatoes, olive oil, Lawry&#8217;s Seasoned Salt, and Chili Powder.</p>



<h2 class="wp-block-heading">Easy Oven Roasted Potatoes</h2>



<p>An hour before baking, peel and chop the potatoes into small chunks. Place the potato pieces in a bowl of water for an hour. This helps remove some of the starch from the potatoes and you get a fluffier bite when you eat your potato.</p>

<p>Once the hour is up, preheat the oven to 425° F and line a baking sheet with aluminum foil. Then drain the potatoes well and put them back in the bowl. Pour in 2 tablespoons of olive oil, 1 tablespoon of seasoned salt, and 2 teaspoons of chili powder. Stir the potatoes up well so they are all covered by the spices.</p>



<p>Spread the potatoes on the prepared baking sheet in a single layer, and put them in the oven for 35 minutes. Fifteen minutes into the cooking time, remove the pan from the oven and flip over the potatoes so they cook evenly. Place the pan back in the oven for the remaining 20 minutes.</p>

<p>It&#8217;s a new year and I am bored with my side dishes. I also don&#8217;t like most vegetables so that makes side dishes more complicated. The fact that I&#8217;m trying to cut carbs well, let&#8217;s just forget that for now. We all know cheddar bacon ranch is a favorite flavor combination in our house so I figured, why not whip up some easy cheddar bacon ranch potatoes to go with the chicken I was cooking. This recipe is so easy and tasty!</p>

<p>You probably have everything you need for this recipe in your pantry: potatoes, shredded cheddar cheese, bacon bits or bacon you can cook and chop, butter, and ranch dressing. Easy peasy, right? <p>The other night we were planning on grilling up a gorgeous rib eye we had picked up on sale at our <strong><a href="https://www.detwilermarket.com/" target="_blank" rel="noreferrer noopener" aria-label="farm market (opens in a new tab)">farm market</a></strong>. I was thinking of having a loaded baked potato with it but Ron doesn&#8217;t like baked potatoes, but he likes mashed potatoes. Our favorite steak restaurant sells loaded mashed potatoes so I figured I&#8217;d give it a try. I&#8217;m excited to say that these are the best loaded mashed potatoes I have ever had!</p>

<p>This recipe was created with ingredients I already had on hand, which makes it even better! I hate having to run to the store to pick up one or two missing ingredients. This recipe makes enough loaded mashed potatoes to feed 4-6 people and is in the crockpot for 4 hours so plan accordingly.</p>



<p>To get this recipe started all you need are 2 pounds of potatoes, I used russets, and 1/2 cup of chicken broth. Peel and quarter the potatoes and place them in the crockpot. Pour in the chicken broth, cover and cook on high for 4 hours. Next I took the rib eye out of the refrigerator and placed it on a plate. I seasoned both sides with my <strong><a href="https://themommaven.com/2017/06/steakhouse-rub/">steakhouse rub</a></strong> and let the steak come up to room temperature.</p>

<p>After the potatoes have been cooking for 3 1/2 hours its time to cook the bacon and chop it up. I use <strong><a rel="nofollow noopener noreferrer" aria-label="these scissors (opens in a new tab)" href="https://amzn.to/2L1Km5Y" target="_blank">these scissors</a></strong> to chop my bacon, so easy to use. Then check and make sure the potatoes are fork tender. If they are tender, use your <strong><a rel="nofollow noopener noreferrer" aria-label="electric hand mixer (opens in a new tab)" href="https://amzn.to/2NBXpwF" target="_blank">electric hand mixer</a></strong> to easily whip the potatoes. Once the potatoes are whipped, mix in the sour cream, salt, and pepper. Carefully fold in the cheddar cheese and bacon. Top with the Colby Jack cheese, replace the lid and cook until the cheese on top is melted, usually 10-15 minutes.</p>

<p>This year for Valentine&#8217;s Day we had decided early on that we were going to stay home and not fight the crowds. I decided to have steaks with my <strong><a href="https://themommaven.com/2017/06/steakhouse-rub/">Steakhouse Rub</a></strong> on them. I asked Ron what he wanted for a side dish and he said, &#8220;Twice baked potatoes.&#8221; Normally we buy the pre-made frozen twice baked potatoes but we are getting away from pre-made foods so I decided to make them from scratch.</p>

<p>I always find it funny that Ron likes twice baked potatoes because he dislikes baked potatoes, loaded or plain. Can anyone explain that to me? No? Ok, I didn&#8217;t think so. </p>



<p>It is very easy to make twice baked potatoes from scratch. Basically you bake the potatoes, scoop out the inside, mix it with chopped up bacon, cheese, milk, salt, pepper, and butter. Scoop the mixture into the potato skin and bake some more. Easy peasy right? Not so easy for me because there are 2 things in this world I can never cook right bacon and rice. Thankfully Ron is great at cooking both.</p>

<p>I was determined to cook the bacon for Ron for our Valentine&#8217;s Day dinner. For me it was an Act of Service for him and if you read about the <strong><a href="https://themommaven.com/2019/02/love-nudge-app-for-couples/">Love Nudge App,</a></strong>you know that Ron&#8217;s love language is Acts of Service and I am working harder to speak his language to him. Unfortunately, I failed, again. The bacon was half burned and half raw! I had to call Ron to come make the bacon&#8230;again. Thankfully the rest of the recipe was easy.</p>

We ALWAYS have mashed potatoes for Thanksgiving, Christmas and Easter at my mom&#8217;s house. I&#8217;m not complaining because I like mashed potatoes but I thought you might want to try something different for your holiday meal&#8230;or any meal for that matter.</p>
<p>These Rosemary &amp; Thyme Smashed Potatoes are time consuming but very easy to make. This recipe feeds 6 but feel free to halve it or double it to meet your needs. I made them the other night to go with some ham and they were a flavorful addition to the meal. Don&#8217;t skimp on the spices when you make this. The recipe says &#8220;to taste&#8221; but I assure you with Rosemary and Thyme you can always add a little more, especially if you are using dry vs fresh.</p>

I made it with my <strong><a href="http://themommaven.com/2013/08/easy-crockpot-chicken-recipe/">Easy Crockpot Chicken</a></strong> but it would pair well with just about any meat. Since this recipe takes some time in the oven, I think it would work best with a crockpot or grilled meat but either way these potatoes are so flavorful you are going to want to pin and/or print this recipe so you won&#8217;t lose it.</p>
