While I was searching Pinterest for some new side dish ideas, I came across this recipe for Roasted Potatoes. I pinned it to my Recipes I want to try board and went on my merry way. When I was asked to bring a side dish to the Father’s Day cookout at my in-laws, I knew this recipe would go great with the steak we were having so I gave it a try. Today I am making these potatoes as a side dish for my Sweet Baby Ray’s Crockpot Chicken.
- 2 large Russet Potatoes
- butter
- Lawry's Seasoned Salt
- Grated Parmesan Cheese
- Scrub the potatoes with a vegetable brush.
- Pierce the potatoes several times with a fork.
- Microwave the potatoes for 6-7 minutes, flipping the potatoes over halfway through.
- Place the potatoes on a cookie sheet covered in aluminum foil.
- Cut the potatoes in half.
- Score the potatoes without cutting through the skin.
- Season the potatoes to taste with the butter, seasoned salt and parmesan cheese.
- place under the broiler for 10-15 minutes, until golden brown.
