When I was asked to review the <em>Secrets of Skinny Cooking</em> <a href="http://amzn.to/2rJ6WVX" target="_blank" rel="nofollow noopener noreferrer"><strong>cookbook by Victoria Dwek and Shani Taub C.D.C.</strong></a> I jumped at it. I am always looking for delicious, healthy recipes. <h2>Mom Maven&#8217;s Thoughts</h2>
<p>I actually liked these skinny apple pie crepes. I am not a yogurt fan so I was skeptical but I liked them! <em>Secrets of Skinny Cooking</em> is a well-written, easy-to-follow cookbook. For me, there isn&#8217;t much I am going to eat out of this cookbook because of the plethora of vegetables and lack of beef and pork. 										<content:encoded><![CDATA[<p>Growing up I hated eggs and sausage. Still, unless they are in a casserole, I only like my eggs over easy and don&#8217;t you dare break the yolk! I also like scrambled sausage but not links and I have yet to try patties. I know, I have A LOT of food issues. Since being introduced to breakfast casseroles a few years ago, I have fallen in love with them. I&#8217;ve already shared my <a href="http://themommaven.com/2014/10/overnight-breakfast-casserole/"><strong>Overnight Breakfast Casserole</strong></a> and my <a href="http://themommaven.com/2014/12/holiday-breakfast-casserole-recipe/"><strong>Holiday Breakfast Casserole</strong></a> with you so today we are doing something a little bit different, a Breakfast Bake with Hash Brown Crust. This recipe is inspired by some I found on Pinterest but I have changed it up a bit.</p>

<p>Jordan said this is his favorite breakfast casserole to date. Ron also found it very flavorful. I enjoyed it bit the Holiday Breakfast Casserole is still my favorite. Jordan wants me to make it with bacon next time so, if I can find some on sale, I may just do that.</p>
<p>It takes some time for the hash browns to thaw so make sure you do at least that the night before you plan to make this. I would actually recommend making the crust and the filling the night before and combining them to bake in the morning to cut down on morning prep if you want to serve this on a school day. You could even bake it the night before and just reheat it in the morning. I enjoyed the leftovers reheated in the microwave the next day.</p>

										<content:encoded><![CDATA[<p>When we homeschooled I always tried to make Valentine&#8217;s Day extra special for my kids. Since they didn&#8217;t have a class full of kids to share Valentines with I often made a special breakfast and we usually did some extra fun activities throughout the day. We also used that day to try to do some acts of service for others to show them that we love them. Often that meant some extra time volunteering at the church doing some cleaning or organizing.</p>
<p>This year Valentine&#8217;s Day falls on a Saturday so moms and dads can slow down a bit and make something special for breakfast to show their family that they care. One food type that I have seen a lot of on Pinterest lately is a braid made with crescent roll dough and stuffed. I have had several recipes of that type pinned for a while so I thought I&#8217;d create a Valentine&#8217;s Day Breakfast Braid. It was quick and easy to make and everyone loved it!</p>

										<content:encoded><![CDATA[<p>A few years ago we had a family reunion. My in-laws rented a house on the water in Homosassa Springs, FL. To share in the work load, each family was in charge of a different meal. My husband&#8217;s cousin and his wife were in charge of breakfast one morning. The night before they left the campfire and went inside to start preparing breakfast. I thought it was odd but I stayed and enjoyed my s&#8217;mores. The next morning breakfast was several pans of Overnight Breakfast Casserole. I was hesitant to eat it because up to that point, I wasn&#8217;t a fan of sausage. Well, I tried a few bites and fell in love! This dish proved to me I like sausage&#8230;just not sausage links. I have been making this recipe ever since that reunion weekend. I hope you enjoy it as much as we do.</p>
<h2>Overnight Breakfast Casserole</h2>

<strong>Ingredients:</strong><br />
2 1/2 cups of herbed croutons<br />
2 cups of mild cheddar cheese<br />
1 lb Jimmy Dean mild sausage<br />
4 eggs<br />
2 1/2 cups of milk<br />
3/4 tsp of dry mustard<br />
1 can cream of mushroom<br />
1/4 cup of milk<br />

<p><strong>Directions:</strong><br />
1. Grease a 9 x 13 pan.<br />
2. Brown and drain the sausage.<br />
3. Layer croutons on the bottom of the pan.</p>

<p>4. Add a layer of cheese</p>

<p>5. Layer the sausage next</p>

<p>6. In a bowl, mix eggs, 2 1/2 cups of milk and mustard<br />
7. Pour the egg mixture over top of layers.</p>

<p>8. Cover and refrigerate 8 hours or overnight.</p>
<p>The following morning:<br />
9. Preheat oven to 350.<br />
10. Mix soup and 1/4 cup of milk.<br />
11. Pour soup mixture over top of casserole.</p>

Cool Whip<br />
5 pieces of black licorice<br />
2 green M&amp;M’s<br />
3 red M&amp;M’s<br />
1 orange gumdrop<br />
5 mini chocolate chips<br />
Circle-shaped cookie cutter</p>
<p><strong><em>Directions</em></strong></p>
<p>1. Heat up three <strong>Aunt Jemima Frozen Pancakes</strong></p>
<p>2. Cut one pancake into a smaller circle for the snowman’s head (cookie cutter works best).</p>
<p>Cut another pancake into a hat shape and use the other pancake as the body of the snowman.</p>
<p>3. On your plate, layout the hat and two circles to create the snowman shape</p>
<p>4. Spread whipped cream (or Cool Whip works best) over the head and body of the snowman</p>
<p>5. Cut up pieces of black licorice for the hat and arms. Lay the licorice pieces over the hat shaped pancake and place the other pieces on both sides of the large pancake for the arms</p>
<p>6. Add two green M&amp;M’s for the eyes and three red M&amp;M’s for the buttons going down the middle of the larger pancake</p>
<p>7. Cut an orange gumdrop in half and lay sticky side down for the nose and place five small chocolate chips for the mouth.</p>

<p>1. Heat up one Aunt Jemima Frozen Pancake</p>
<p>2. Spread strawberry jelly over the top of pancake to make a circle</p>
<p>3. Slice a gumdrop in half and place both halves side by side (sticky side down) off the top part of the pancake</p>
<p>4. Cut a piece of black licorice in half to make the ornament hook and lay the pieces on the plate above the gumdrops</p>
<p>5. Cut a mini marshmallow in a diamond shape and place in top right corner of ornament pancake to add dimension.</p>
