Christmas is over and we are heading into the new year. It’s time to add some new recipes to our meal plan rotation! We don’t want our dinner routine to be boring and predictable so we need to add a few new recipes each month and see which ones become family favorites. Our newest family favorite is my Simple Jamaican Spice Rubbed Chicken.
This Simple Jamaican Spice Rubbed Chicken recipe has taken some time and tweaking to get it just right and I feel like we are finally there. This spice rub adds a lot of flavor and just a little heat to normally bland chicken breasts. I serve it with my Copycat Parmesan Pasta Roni Recipe and a vegetable for a well rounded meal. You might want to serve Melting Potatoes with it instead of the pasta.
This delicious spice rub is perfect on chicken breasts for Jamaican Spice Rubbed Chicken.
- 2 TBS Brown Sugar
- 1 TBS Ground Allspice
- 1 TBS Thyme
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
- 1/4 tsp Cayenne
- 1 1/2 lbs Chicken Breasts boneless & skinless
Line a 13 x 9" baking pan with aluminum foil and set aside.
Preheat oven to 450° F.
In a small bowl or ramekin mix together the brown sugar, allspice, thyme, garlic powder, salt, pepper, and cayenne. Set aside.
Cut up the chicken breasts into 4 even portions.
Rub the breasts on all sides with the spice rub. Place on prepared pan.
Place pan in oven and bake for 15-18 minutes, until chicken reaches 165°F internal temperature.
Remove from oven and let rest for 5-10 minutes before slicing and serving.
It is a very easy meal to make with ingredients you probably already have on hand. If it seems too spicy for the kids you can cut back the cayenne to 1/8 teaspoon or omit it altogether to meet your family’s needs.
