  2. Measure 3/4 cup very warm water (120-130 degrees)
  3. Add water and oil to dry ingredients
  4. Stir until thoroughly combined (Dough may be stiff; use hands if desired)

Rise and Shape

  1. Cover dough and let rise 25 minutes in a warm, draft-free place (Dough will not double in size)
  2. While the dough is rising, unwrap 24 caramels, cut them in half and set them aside
  3. Place dough on a clean dry surface and shape into a loaf
  4. Divide the loaf into 8 equal pieces
  5. Cover with a towel to prevent dough from drying
  6. Roll each piece into a 12-inch rope
  7. Cut rope into 6 equal pieces
  8. Roll each piece into a ball and then place on a baking sheet, and make an indentation in the middle
  9. Cover the pretzel bites with towel

Boil, Fill and Bake

  1. Preheat oven to 400 degrees, line a cookie sheet with parchment paper
  2. Combine 6 cups of water with the contents of the baking soda packet in a large deep saucepan until mixture boils
  3. Using a slotted spoon, dip one pretzel bite at a time into the boiling water
  4. Allow pretzel to slide off the spoon into the water for 10-15 seconds
  5. Remove the pretzel from the water and place on the prepared baking sheet
  6. Continue with the remaining pretzels
  7. Press a piece of caramel into each of the pretzel bites
  8. Sprinkle each pretzel bit with pretzel salt
  9. Bake for 10-12 minutes, until golden brown
  10. Cool on a wire rack

Recipe Notes

Baking soda can be corrosive to certain materials. We do not recommend using saucepans that have hard anodized finishes.
