Elote Mexican Street Corn is and easy and delicious twist on corn on the cob.

Ingredients

  • 4 ears of sweet corn shucked with silks removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup Cotija Cheese or Feta if you can't find Cotija
  • 1 1/2 tsp Chili Powder

Instructions

  1. Grill the corn until slightly charred, about 10 minutes turning regularly.
  2. In a bowl mix together the sour cream, mayonnaise and chili powder.
  3. Slather the mayonnaise mixture onto the warm corn.
  4. Pour the cheese onto a plate.
  5. Roll the corn in the cheese.
  6. Enjoy!
