I’ve been on an Asian inspired food kick lately. We’ve had Huli Huli Chicken, Hawaiian Burgers with Teriyaki Mayo (I could eat those every day), Asian BBQ Pork Chops, and now Teriyaki Beef with Rice. I’m thinking something ramen will be next.

The thing with Asian food is it often requires a lot of ingredients or non-traditional cooking methods. I have gotten pretty good at re-creating recipes and making them easy to make. I’m just a mom cooking for my family in my tiny galley kitchen so I have to make do with what I have.

I was a bit nervous about this teriyaki beef with rice recipe because I have a lot of trouble cooking rice. It always sticks to the pan. I actually considered borrowing my daughter-in-law’s Instant Pot since I’ve heard it is simple to cook rice that way. I decided to put my big girl panties on and learn how to make nice fluffy white rice. I did a lot of research and…it actually worked. This was some of the best white rice I’ve ever eaten.

This easy and affordable Teriyaki Beef and Rice is a flavorful and filling weeknight meal.

Ingredients
Sauce
  • 2/3 cup soy sauce
  • 2 tsp corn starch
  • 5 cloves garlic minced I used the minced garlic in a jar
  • 1/2 tsp chili powder
  • 1 tsp ground ginger
Rice
  • 1 cup long grain rice
  • 2 cups water
  • 2 TBS butter
Beef
  • 1 1/2 lbs ground beef
  • 2 TBS vegetable oil
Instructions
Sauce
  1. In a bowl, mix together the soy sauce, corn starch, garlic, ginger, and chili powder.

  2. Set aside.

Rice
  1. Bring 2 cups of water to boil in a pot with a well fitting lid.

  2. While waiting for the water to boil use a metal strainer to rinse the rice, one half cup at a time. Keep rinsing until the water coming out of the rice is clear. Use your finger to move the rice around in the strainer. This very important step removed excess starch from the rice allows your rice to be fluffy instead of clumpy.

  3. When the water has reached a rolling boil, add in the rice and the butter.

  4. Stir well.

  5. Cover, reduce heat to simmer and let cook 20 minutes or until all of the liquid is incorporated.

Beef
  1. Heat the vegetable oil in a pan over medium heat. When the oil becomes wavy, add your ground beef.

  2. Crumble and cook your ground beef until it is cooked throughout with no pink showing.

  3. Reduce heat to low. Add 1/3 cup of the sauce to the crumbled beef. Mix well and cook for an additional 5 minutes.

  4. Serve the beef over the rice. Use the reserved sauce as a drizzle to add flavor to the rice.
