<p>Way back, right before things got crazy with the Wuhan Virus, we were living through Wonka week. Woodland Fine Arts Academy Select Troupe performed their Willy Wonka music March 12-14th and we had tech/dress rehearsals the 7th, 9th, 10th, and 11th. Myself, Ron, and Jordan are the tech crew and Savannah is the assistant stage manager. Jordan and Savannah both work full time at Woodland so on Tuesday night I brought dinner for all of us and I made Fiesta Chicken with Pasta.</p>

<p>I baked it in my <strong><a rel="noreferrer noopener" href="https://amzn.to/3bV7lKU" target="_blank">2 quart Pyrex baking dish</a></strong> with lid to make it easier to transport. I brought paper plates and plastic utensils to make clean-up a breeze. We arrived early so the kids could join us and eat before we all had to get ready for tech rehearsal. It was wonderful to eat a home cooked meal since show week is often filled with pizza and fast food. This easy recipe takes less than an hour to prepare and it serves 8 people so there is plenty to go around.</p>



<p>I&#8217;m finally sharing this recipe now because it is an easy recipe for Cinco de Mayo and is made with mostly pantry staples. This recipe does call for 2 cups of cooked and chopped chicken. I always recommend having some in the freezer, just use my <strong><a href="https://themommaven.com/2014/05/easy-recipes-make-shredded-chicken-crock-pot/">shredded chicken recipe</a></strong> and cube it instead. Then fill freezer bags with 2 or 3 cups of chicken and then all you have to do is defrost it before adding it to your next casserole.</p>



<p>In addition to the chicken this recipe calls for half a box of angel hair pasta, two cans cream of chicken soup, one cup of salsa, 1 cup of sour cream, 2 cups shredded Mexican cheese blend, and two tablespoons of taco seasoning.</p>

<p>It recently came to my attention that Campbell&#8217;s recently released a <strong><a href="https://amzn.to/3aGQ1bC" target="_blank" rel="noreferrer noopener" aria-label="Cream of Bacon Soup (opens in a new tab)">Cream of Bacon Soup</a></strong>!! I use a lot of canned cream soups in my recipes so I couldn&#8217;t wait to try this one. I mean, who doesn&#8217;t love bacon? Well, that cream of bacon soup is the base for my Easy Bacon Parmesan Pasta recipe.</p>

<p>As soon as I heard about the soup my brain started thinking of several different ways I could use it in casseroles, with pork chops, for breakfast, the possibilities are endless! I&#8217;m sure this is the first of many recipes using cream of bacon soup. You can try it too! So what are you waiting for? <p>I created this recipe with the bacon bits in the soup being the only protein, this did not make my hubby happy. Next time I will be adding<strong><a href="https://themommaven.com/2014/05/easy-recipes-make-shredded-chicken-crock-pot/"> pre-cooked and chopped chicken</a></strong> to my saute pan to keep him happy.</p>



<p>Other than the soup, which was new to me, the rest of the ingredients are pantry and fridge staples-olive oil, minced garlic, milk, shredded Parmesan cheese, real bacon bits, and pasta. I used Penne but you can use just about any pasta you have on hand.</p>

<p>I love spaghetti carbonara! I told you all about my love for it when I shared my Simple <strong><a href="https://themommaven.com/2017/05/simple-spaghetti-carbonara/">Spaghetti Carbonara </a></strong>recipe a while back. That recipe is still one of my all-time favorites. Ron likes it but complains that there isn&#8217;t enough meat in it, so today I bring you Simple Slow Cooker Chicken Carbonara with Linguine.</p>

<p>This is a knock off carbonara, as are most American carbonara, because it is made with jarred Alfredo sauce and bacon instead of Pecorino Romano, egg, guanicale (pork jowl), and black pepper. </p>



<p>This slow cooker chicken carbonara with linguine recipe starts by cooking your chicken in the slow cooker following my <strong><a href="https://themommaven.com/2014/05/easy-recipes-make-shredded-chicken-crock-pot/">recipe here</a></strong>. Instead of shredding the chicken after it has cooked for four hours, you chop it up. Then place the chicken pieces back in the slow cooker with the Alfredo sauce, black pepper, and cheese. Cook another 30 minutes on high to let the flavors meld and the cheese melt. During this time you can cook the pasta and the garlic bread and put everything together when it is ready.</p>

<p>I didn&#8217;t write out my monthly meal plan for May! &lt;gasp> When I don&#8217;t menu plan dinner time can be a bit dicey and we end up eating out much more than usual. This month was no exception but, since it is my birthday month, I had a lot of FREE meal/dessert/appetizer coupons in my email box and we used a lot of them. Not having a meal plan I usually end up being creative, last minute, with the items I have on hand. That is how Spaghetti Lasagna Casserole was created.</p>

<p>I had leftover cream cheese from all of my <strong><a href="https://themommaven.com/2019/05/oreo-cheesecake-bites-recipe/">cheesecake</a></strong> making as of late.  Add to that some pasta, tomatoes, sour cream, cheese, and spices and voila, dinner is served. It really is that easy to whip up this pasta casserole.</p>

Over the last year or so I have been working hard to reduce the packaged foods we eat. We all know that packaged foods are filled with salt, artificial colors, and who knows what else. I haven&#8217;t bothered to look for an alternative to our beloved Pasta Roni Parmesan because I figured it wouldn&#8217;t be as easy to make. Recently, it&#8217;s been bugging me every time I cooked the boxed noodle dish so, I did something about it. I searched for recipes and tweaked one until we liked it. My Pasta Roni Parmesan copycat recipe has more garlic than the original but it suits my family and hopefully it will suit yours too.</p>
