<p>For years I&#8217;ve seen recipes on Facebook for Melt In Your Mouth or (MIYM) Chicken on Pinterest, but I&#8217;d never tried it. The other day I decided to read several recipes and then take the best bits and make my own version of Melt in Your Mouth Chicken..</p>



<p>This chicken is easy to make and yes, it melts in your mouth. I couldn&#8217;t call it Melt in Your Mouth Chicken if it didn&#8217;t! Could I?</p>

<p>This recipe serves 4 people. Since it&#8217;s just Ron and I at home now, I actually made half of this recipe and it worked very well. Feel free to scale it to feed your family.</p>

Facebook is filled with moms complaining about car rider lines,piles of homework, sports schedules, dance classes and everything else that is part of an over scheduled family. Family meal times have always been very important in our house. They were the priority other things were scheduled around. Family dinner time should be peaceful, relaxing, and full of talking. No phones, no TV or other distractions, just eat and talk about your day. Unfortunately that scenario has been lost in many households as parents want to give their kids more opportunities. More isn&#8217;t always better, especially at the cost of daily family time around the dining table. One way we can make family dinners popular again is by finding recipes that are easy to prepare and family friendly. This Queso Chicken recipe is one such recipe.</p>
<p>It only takes 4 ingredients to make this Queso Chicken recipe, 3 of which are pantry staples, at least at my house. Go defrost 3 chicken breasts and grab a can of corn, a can of Rotel tomatoes with green chiles, and a loaf of Velveeta Queso Blanco and let&#8217;s get started.</p>

In 2 weeks we will be empty nesters so we don&#8217;t have to deal with the school year craziness anymore but I remember it well. We homeschooled our 2 boys and I worked in our church office, taught private music lessons, ran a homeschool musical theater group and volunteered in multiple capacities at church. Phew, I get tired just thinking of those days. One thing I was always on the lookout for were easy, flavorful dinners that my family would enjoy. Recently I came upon a recipe on the Pillsbury website, tweaked it just a bit and now it is a family favorite. Chicken Bacon Ranch Crescent Roll-Ups make an easy lunch or dinner and they re-heat well so you can serve the leftovers too.</p>

With it being the end of the month I had also run out of meals on my meal plan because we actually ate at home more than usual this month. Thankfully I was able to pull together a delicious new recipe out of items already in my pantry and freezer and I&#8217;m calling it Crockpot Pesto Chicken.</p>

Of course, I am consistent with my Plexus vitamins, probiotics, and supplements, I&#8217;ve logged my food all month, I&#8217;ve worked out at least 3 times a week, and I have made wiser food choices. I&#8217;m not saying I&#8217;ve been perfect, my water consumption has been way down <img src="https://s.w.org/images/core/emoji/14.0.0/72x72/1f641.png" alt="🙁" class="wp-smiley" style="height: 1em; max-height: 1em;" /> and not all my food choices have been healthy but I am making strides to my new, healthier lifestyle.</p>

<p>Today&#8217;s Crockpot Pepperoni Chicken with Penne is a lighter meal for us and thankfully, we enjoyed it. You could make it even lighter by trading out the regular pepperoni for turkey pepperoni but that idea didn&#8217;t fly with my husband, baby steps. Right?</p>

I don&#8217;t have many failures but that one was so while I go back to the drawing board with that recipe, I decided an easy pasta recipe always hits the spot. Today I bring you 3 Cheese Chicken Ziti Casserole. I actually found the basis for this recipe on Pinterest, but it was a hot mess of a poorly written recipe. It was a jumping off point for this flavorful, easy recipe.</p>

<p>This recipe includes 1 pound of cooked and cubed chicken breasts. There are 3 easy ways to accomplish this 1. Buy a rotisserie chicken from your local supermarket and chop it up, 2. <a href="http://themommaven.com/2014/05/easy-recipes-make-shredded-chicken-crock-pot/"><strong>Make it in your crockpot</strong></a>, 3. Grill up some chicken breasts and cut them up. Make sure you do this in advance. The chicken prep time is not a part of this recipe so please plan ahead.</p>

For years I have used jarred Alfredo sauce because I thought it would be difficult to make at home, but I was wrong. I found a few Alfredo sauce recipes on Pinterest and they seemed easy enough. I took those and added some chicken and pasta to it to make this easy, delicious, one pot meal. I used a <a href="http://amzn.to/2opdQ2h" target="_blank" rel="nofollow"><strong>Calphalon Sautee</strong></a> pan to make this recipe.</p>

This meal is delicious but the colors are terrible and no amount of lighting or editing can make this meal look nearly as appealing as it tastes. I am sorry for the photos but when chicken and pineapple sit in a crockpot with barbecue sauce for hours the result isn&#8217;t so pretty. These photos are the best of all the ones I took so, please overlook them.</p>
<p>While I was trying to come up with what to have for dinner on a day I didn&#8217;t want to leave the house, I had to get creative. I defrosted some chicken breasts as I hunted my poorly stocked for other ingredients. This Crockpot Pineapple Barbecue Chicken with a side of Vigo Yellow Rice was a delicious meal that was simple to make with just a few pantry staples.</p>

My <a href="http://themommaven.com/2015/01/buffalo-chicken-dip-recipe/"><strong>Buffalo Chicken Dip</strong></a> is requested at every church gathering. There is just something about spicy chicken, cheese and ranch dressing that makes my mouth water. When I saw this Buffalo Chicken Crescent Ring on Pinterest from <a href="https://www.pillsbury.com/recipes/buffalo-chicken-crescent-ring/572dc7ae-85ff-414c-83d4-454a51cdf33f" target="_blank" rel="nofollow"><strong>Pillsbury</strong></a>, I knew I had to try it. I am pleased to say it was easier to make than it looks. I tweaked the recipe to fit our tastes and &nbsp;I whipped it up for lunch on a Saturday. Jordan said it was one of the best things I have ever cooked! He has already asked me to make it for our family Super Bowl party.</p>

<p>This recipe calls for cooked shredded chicken. I usually have 3 cup bags of cooked shredded chicken in my freezer. When boneless skinless chicken breasts are on sale I pick up a bunch and cook it up in my crockpot. I shred some and cube some so that it is ready when I need it for a recipe. 										<content:encoded><![CDATA[<p>When we got married a friend of mine gave me a recipe book she had typed and compiled of easy recipes. I remember that there was one recipe in their for a Cajun chicken dish that Ron loved. We ate it weekly for the first few years of our marriage, but it was too spicy for the kids so I stopped making it. We&#8217;ve been married almost 25 years and I haven&#8217;t made that recipe in forever, I wonder if I still have that cookbook?</p>
<p>Anyway, this recipe brought back memories of that old one. We used to go through Cajun spice like it was water! Now I seldom use that particular spice, but I did here. I hope you enjoy this recipe with a kick!</p>

<p>As you can see there are 3 basic parts to this recipe, the chicken, the pasta and the sauce. If working on all of them together is a bit much for you just do one at a time and put it together at the end. This recipe looks complicated but it is rather easy and I hope you give it a try.</p>
