In my quest to find or create easy peppermint inspired recipes for your Christmas baking I happened upon several versions of Peppermint Bark Brownies. Some of these recipes were over complicated with supermoms actually making brownies from scratch! I love brownies and I love peppermint bark so I just combined to two into this easy, Christmasy recipe. Make sure you are following my Peppermint board on Pinterest!

I am all about easy recipes and it doesn’t get much easier than these Peppermint Bark Brownies. If you can make brownies from a box, you can make these brownies!

Peppermint Bark Brownie Recipe

Ingredients

  • 1 boxed brownie mix and eggs and oil as directed on box
  • 3 full size candy canes, crushed
  • 1 1/2 cups white chocolate morsels

Directions

  1. Preheat oven as directed on brownie box.
  2. Prepare 8×8″ pan for baking.
  3. Mix together the brownie mix, eggs and oil as directed on box.
  4. Bake according to directions on box.
  5. Remove brownies from oven and set on wire rack to cool.
  6. Immediately after removing brownies from oven, place the white chocolate morsels in a microwave save bowl.
  7. Microwave at 30 second intervals, stirring in between, until chocolate is completely melted.
  8. Stir in crushed candy canes.
  9. Spread the white chocolate/candy cane mixture over the brownies.
  10. Refrigerate for at least 1 hour before serving.

How easy is that? I shared my brownies with my friends when they came over for a visit and everyone loved them!
