Wow! I’ve made a lot of cheesecake lately! This was another birthday treat from one of my “kids”. Yes, I have a lot of kids and we have a lot of May birthdays. We have 8 May birthdays, that I can think of, plus Mother’s Day, so that is a lot of celebrating in May!

While we were enjoying the Strawberry Swirl Cheesecake for RB’s birthday, Verlin said, “I’ll take Oreo cheesecake for my birthday.” Verlin’s birthday is today, the day before my birthday, and we have celebrated together at Walt Disney World a few times.

Since I knew I’d be bringing Verlin’s birthday treat to trivia on Tuesday night, I decided to make Oreo Cheesecake Bites since they are easier to transport and serve. To make the cheesecake I halved the no-bake cheesecake recipe I used for the Orange Creamsicle Cheesecake recipe I made for our Easter cookout. This made exactly 12 cheesecake bites.

This easy, no-bake recipe comes together quickly but should be refrigerated for at least 6 hours before serving.

Ingredients
  • 24 Oreo Cookies divided
  • 8oz cream cheese softened
  • 2 TBS sour cream
  • 1/2 tsp clear vanilla extract
  • 1/2 cup confectioner's sugar
Instructions
  1. Place a cupcake liner in each section of a 12 cupcake pan.

  2. Place an Oreo cookie in each cupcake liner.

  3. Place the remaining 12 Oreos in a food processor and coarsely crush them. Do not pulverize them. Set aside 1/4 cup of cookie crumbs for topping.

  4. In the bowl of a stand mixer, beat together the cream cheese and the sour cream until smooth.

  5. Add in the confectioner’s sugar and vanilla. Mix until combined.

  6. Using a spoon, fold the remaining cookie crumbs into the cream cheese mixture.

  7. Using a tablespoon or cookie scoop, fill each cupcake liner about 3/4 full with cheesecake mixture.

  8. Sprinkle the cookie crumbs on top.

  9. Refrigerate at least 6 hours. Serve chilled.
