I wanted to make a fall bar cookie for Friend Day at our church. It is one of the biggest events on our church calendar and I was asked to make some desserts for the barbecue we were having after church. I did some digging and found this easy recipe for White Chocolate Cranberry Bars in my copy of The Ultimate Cake Mix Cookie Book. Every recipe in this book starts with a box cake mix so they are easy to make!

Easy white chocolate cranberry bars

These easy-to-make bar cookies are a wonderful treat for any of the fall holidays.
Course: Dessert

Servings: 18 -24 bars

Ingredients
  • 1 18.25 oz box white cake mix
  • 1 stick butter melted
  • 2 large eggs
  • 2 TBS milk
  • 1 1/2 cups dried cranberries I used Craisins
  • 1 cup white chocolate chips
Instructions
  1. Preheat oven to 350°.
  2. Line a 13x9" baking pan with foil and spray with non-stick cooking spray.
  3. In a medium bowl use a wooden spoon to mix together the cake mix, melted butter, eggs and milk until well blended.
  4. Mix in the cranberries and the white chocolate chips.
  5. Spread evenly into the prepared pan.
  6. Bake 21-25 minutes, until edges are golden and a toothpick inserted in center comes out clean.
  7. Cool in pan for 15 minutes.
  8. Transfer to wire rack and cool completely.
  9. Cut into bars.

These bars were a big hit! I tracked down a few people at the barbecue that were eating them and they all said they were a great flavor combination and delicious!
