One of my favorite flavor combinations is chocolate, marshmallow, and graham cracker. Yum! S’mores is a go-to for me. Unfortunately, Ron doesn’t like s’mores so I don’t eat them as much as I would like. I am blessed to regularly get to bake desserts for other people, not just my husband. A while back we were having a potluck in Phone Central. I had planned to bring Walt’s Balls, but once we all discussed what we were bringing, there was a lot of meat and no dessert! My friend had told me about a Crockpot S’mores cake she made in her crockpot so I had to give it a try for our potluck.

I mixed the cake mix up at home and brought it to work in a sealed plastic container. I assembled the dessert in the crockpot at work so that it could cook and be served as our afternoon snack.

All you need is a chocolate cake mix plus whatever additional ingredients the cake mix requires, 2 cups mini marshmallows, 2 cups milk chocolate chips, and 2 sleeves of graham crackers.

Crockpot S’mores Cake Recipe

Mix the cake mix as directed on package. Spray the inside of the crockpot with nonstick spray. Stand up graham crackers around the edge of the crockpot, then pour in half of the cake mix

Top the cake mix with 1 cup of mini marshmallows and 1 cup of chocolate chips.

Cover with a layer of graham crackers, break them if necessary to fill in the gaps. Pour the remaining batter over the graham crackers.

Cook on low for 3 1/2-4 hours, until cake is almost set. Add the other cup of marshmallows, and the cup of chocolate chips. Crumble up the remaining graham crackers and sprinkle on top. Cook for an additional 30 minutes.

Serve alone or with vanilla ice cream.

Ingredients
  • 1 Chocolate cake mix and the other ingredients required on box
  • 2 cups mini marshmallows
  • 2 cups milk chocolate chips
  • 2 sleeves graham crackers
Instructions
  1. Spray the inside of the crockpot with non-stick spray.

  2. Mix together the cake batter following the directions on the box, set aside.

  3. Line the crockpot with graham crackers.

  4. Pour in half the cake cake batter.

  5. Top the batter with 1 cup of mini marshmallows and 1 cup of chocolate chips.

  6. Create a layer of graham crackers, breaking them if needed to make a complete layer.

  7. Pour the rest of the cake batter on top of the graham crackers.

  8. Cover and cook on low for 3 1/2-4 hours, until cake is almost set.

  9. Top the cake with the remaining marshmallows and chocolate chips. Crumble up the remaining graham crackers and sprinkle on top.

  10. Cook for an additional 30 minutes, until melted. Enjoy.
