A few weeks ago when we were planning our Super Bowl party menu, Jordan said he wanted to make a Crockpot Mac ‘n Cheese recipe that he had seen on Facebook from The Blind Lady Cafe. I told him I would be using my crockpot to make the Spicy Queso so he would need to borrow one somewhere. He called his brother and asked if he could borrow one of the 3 crockpots they received as wedding gifts, of course, the answer was “Yes.” Jordan went to pick up the crockpot and then stopped at the store for the ingredients, he says they cost about $10.
Sunday afternoon, Jordan set about making his mac ‘n cheese. The recipe says you can cook it one length of time for uncooked noodles and another for cooked noodles. Jordan chose to pre-cook the noodles. Unfortunately, he was so into the process, he forgot to take the photos I had requested of him!
- 16 oz Elbow Macaroni
- 2 1/2 c Milk
- 3 c Shredded Cheddar Cheese
- 12 oz Evaporated Milk
- 8 oz Cream Cheese
- Spray the crockpot with non-stick spray.
- Place all the ingredients into the crockpot.
- Cook on low.
- After 2 hours of cooking, stir well.
- Continue cooking for 30 minutes more.
- Reduce temperature to warn setting until serving.
- Cook the noodles in a pot according to the package directions.
- Spray the crockpot with non-stick spray.
- Place all the ingredients into the crockpot.
- Cook on low.
- After 90 minutes, stir well.
- Continue cooking for 30 minutes more.
- Reduce temperature to warn setting until serving.
Jordan, Aaron and Summer loved this dish! Jordan ate the leftovers for days. For me, it was ok but not great. It was very creamy but not cheesy enough for me. I have a feeling this is a recipe Jordan will be making for his host families when he heads back out on the road. It is simple to make and feeds a lot of people.
