Even though fall won’t arrive here in Florida til the middle of October, it’s time to start sharing fall recipes. I’ll start with my Cinnamon Apple Coffee Cake. Of course, this cake is delicious year round, but the cinnamon apple combination is quintessentially fall.
This recipe calls for 2 cups of tart baking apples peeled and chopped. Here is a list of the popular tart baking apples.
- Golden Delicious is a great baking apple. It is more sweet than tart and it retains its shape after baking.
- Cortland are slightly tart and somewhat sweet, a great all around baking apple.
- Granny Smith is crisp and sour, one of the most popular baking apples as it pairs well with sweet or warm spices. I always bake with Granny Smith apples.
- Honey Crisp holds firm when baked and has a more sweet than tart flavor.
Cinnamon Apple Coffee Cake Recipe
Ingredients
- 2 cups tart apples peeled and chopped
- 1 cup sugar
- 1/2 cup butter flavored shortening
- 1 tsp vanilla
- 2 eggs room temperature
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon divided
- 1 cup sour cream
- 3/4 cup brown sugar packed
- 2 TBS cold butter sliced
Cinnamon Apple Coffee Cake Instructions
- Preheat the oven to 350°F. Grease two 8 x 8″ baking pans and set aside.
- In the large bowl of a stand mixer, cream together the sugar and shortening until fluffy.
- Add in the vanilla and eggs. Beat until well combined.
- In a separate large bowl, sift together the flour, salt, baking soda, baking powder and 1/2 tsp of the ground cinnamon.
- Gradually mix the dry ingredients with the batter, alternating with the sour cream. Mixing well.
- Stir in the apples using a wooden spoon.
- Divide into prepared baking pans.
- In a small bowl, use a dough blender to combine the brown sugar, 1 tsp cinnamon, and butter until combined yet crumbly.
- Sprinkle the topping over the batter.
- Bake for 30 minutes or until a toothpick comes out clean.
- Delicious when served warm or cool. Cover and refrigerate any leftovers.

I kept one of the pans here at home and I took the other one to church. I shared it with the volunteers serving with me in Kid’s Church. They all gave this recipe rave reviews. Several specifically mentioned how moist the cake was.
