We aren’t soup people. Pretty much we eat tomato or chicken noodle soup on occasion. I will sometimes order soup at a restaurant but Ron and Jordan aren’t big soup eaters. For about 2 years I have had several Cheeseburger Soup recipes pinned on my Recipes I Want to Try Board. Every time I talked about making soup Ron would talk me out of it. One of the reasons he didn’t want soup is that iit is too hot out. I agree, we live in Florida so far we have had 2 days of winter, January 8th and 9th we were in the 40s, now we are back to 80°! So, in preparation for our 2 day winter, I finally created a Bacon Cheeseburger Soup recipe…and everyone liked it! This recipe makes a lot of soup, it filled my crockpot to the brim. I sent a large bowl of it to my in-laws because we could never eat all of that soup.
- 2 lbs cooked ground beef
- 12 oz bacon cooked and chopped into small pieces
- 6 medium potatoes peeled and diced
- 8 oz cream cheese softened and cubed
- 48 oz chicken broth
- 2 Tbs dried minced onion
- 1 Tbs dried minced garlic
- 2 tsp salt
- 1 tsp pepper
- 2 cups of milk
- 1/2 cup of flour
- 3 cups of shredded sharp cheddar cheese divided
- 14.5 oz can diced tomatoes drained
- Place the cooked beef, bacon, potatoes, cream cheese, onion, garlic, salt, pepper, and chicken broth into the crockpot.
- Cook on low for 6 hours.
- In a bowl, whisk together the flour and milk. pour the mixture into the crockpot.
- Add 2 1/2 cups of cheddar cheese.
- Stir gently.
- Cook for another hour on low.
- Serve with reserved cheese sprinkled on top.
This is a very easy soup recipe. It is basically a dump recipe with no special skills required. Do you have a favorite soup recipe?
