We made it to week 6 of my fall apple recipe series! This week isn’t a round up, it’s a brand new recipe, apple toffee Blondies, which I made. Back in early October we had a Young Living Essential Oils Dream Mentors Retreat weekend. Our upline from Michigan came down and taught us about living a healthier lifestyle with essential oils. We learned about hormones and essential oils and skin care and essential oils as well as a great overview of why essential oils are so beneficial for our overall well being. It was an amazing weekend!

This apple recipe is easy to make. the Apple toffee blondies are rich and chewy, studded with pieces of apple and toffee bits.

I was in charge of the snacks for our gatherings. Today I bring you the first of three recipes I made for that weekend. It also serves as the 6th post in my fall apple series which has included- 11 Apple Crisp Recipes, 27 Apple Cakes Pies and Pastries, 24 Apple Breakfast Recipes, 23 Apple Cobblers, Cookies, and More, and 22 Sweet and Savory Apple recipes. Today’s Apple Toffee Blondies recipe brings us to 108 apple recipes!! I served this treat at our opening, Friday evening session and it was a hit.

These apple toffee blondies are rich and chewy, studded with pieces of apple and toffee bits. They are perfect for any fall gathering.

Ingredients
  • 1 18.25oz Vanilla Cake mix I used Duncan Hines French Vanilla
  • 2 lg eggs
  • 1 stick butter melted
  • 1/4 cup brown sugar packed
  • 1 tsp vanilla extract
  • 1 cup granny smith apples chopped
  • 1/2 cup toffee baking bits
Instructions
  1. Line a 13 x 9" baking pan with foil and set aside.

  2. Preheat oven to 350° F.

  3. In a large mixing bowl, blend together the cake mix, eggs, melted butter, brown sugar, and vanilla with an electric or stand mixer on medium speed for 1-2 minutes.

  4. Using a wooden spoon, carefully fold in the chopped apple and toffee bits until well combined.

  5. Press batter into prepared pan.

  6. Bake at 350° for 22-25 minutes, until they are golden brown and just barely set at the center.

  7. Remove from oven and cool completely on a wire rack before cutting.

When making this recipe make sure to dice the apples into small cubes. Remember what Chef Anne says, “Sticks, Slices, Dices” it’s the best way to get consistent knife cuts. My husband laughed as I was reciting this mantra while dicing my apples! Her mantras work and its just one reason I love watching Worst Cooks in America, I actually learn things from that show.
