Crockpot Chicken Tacos

These easy shredded chicken tacos are made in the crockpot and are perfect for a busy week night dinner.

Ingredients

  • 2-3 boneless skinless chicken breasts, frozen
  • 1 oz packet taco seasoning
  • 10 oz bag frozen corn
  • 16 oz jar salsa mild or medium
  • 8 oz shredded Mexican cheese blend seperated
  • 1 bag tortilla chips
  • 1 pkg corn tortillas
  • 8 oz sour cream

Instructions

  1. Place the chicken in the crockpot.
  2. Sprinkle the taco seasoning on the chicken.
  3. Pour in the corn and the salsa.
  4. Cover and cook 3 hours on high or 5 hours on low.
  5. Remove chicken from crockpot. Shred chicken.
  6. Place chicken back in the crockpot along with 4 oz of cheese. Stir well.
  7. Serve as tacos or nachos with extra cheese and sour cream to garnish.
