Confetti Cloud Cookies

These easy and delicious Confetti Cloud Cookies look and have the texture soft of clouds. The recipe base is a confetti cake mix which makes it easier for the kids to help make because there is less measuring.

Ingredients

  • 1 15.25 oz Confetti Cake Mix I used Betty Crocker
  • 8oz Cream Cheese softened
  • 1 stick Butter softened
  • 1 Egg
  • 1/4 cup Sprinkles try to match what's in the cake mix
  • 1/2 cup Confectioner's Sugar

Instructions

  1. In a stand mixer beat together the cream cheese and butter until smooth.

  2. Add in the egg and continue mixing until incorporated.

  3. Add in the cake mix, mixing until well combined, scraping the sides as necessary.

  4. Remove bowl from stand and fold in the additional sprinkles.

  5. Cover dough bowl with plastic wrap and put in refrigerator for an hour to chill.

  6. When the hour is up, preheat oven to 350°F, and line baking sheets with parchment paper.

  7. Pour the confectioner's sugar into a small bowl.

  8. Using a 1" cookie scoop, scoop up a ball of dough, roll the dough ball in the confectioner's sugar and then place it on the baking sheet.

  9. Repeat this process, placing the dough balls 1.2 inches apart.

  10. Bake the cookies for 12-15 minutes until the edges start to turn golden and the tops are set.

  11. Allow the cookies to cool for 3-5 minutes on the baking sheet before removing them to a wire rack to cool completely.

  12. Repeat until all the dough is baked.

  13. Once completely cooled, store in an airtight container.
