Easy and delicious, this S'mores Brownies recipe brings the flavors of an evening around the campfire indoors for year round enjoyment.
Line a 9 x 13" pan with parchment paper. Set aside.
Preheat oven to 350° F.
Melt butter in microwave safe bowl.
Place the graham crackers in a food processor, I use my Ninja Duo, pulse until finely crushed.
Pour the graham cracker crumbs, butter, and sugar into a medium mixing bowl and combine well.
Press the crust into the prepared pan. Set aside.
Melt the butter in a microwave save bowl, set aside to cool a bit.
Using a large strainer, sift together the cocoa powder, flour, sugar, salt, and baking powder into a medium bowl.
In a large bowl, beat together the eggs and vanilla.
Pour the butter into the egg mixture and continue beating.
Slowly incorporate the dry ingredients into the wet ingredients while beating.
When well mixed, pour the brownie batter into the pan, on top of the crust.
Bake for 20-22 minutes.
Remove from oven. Turn oven to broil.
Top with chocolate chips and marshmallows.
Place brownies under broiler for 2-3 minutes until the marshmallows turn golden brown.
Allow to cool, then slice and enjoy.
You can use a box mix of brownies if you prefer.
