Want to add some heat and tang to boring chicken breasts? Try this super simple, 2 ingredient, Sweet Chili Chicken Marinade.

Ingredients

Marinade

  • 2 TBS Sweet Chili Sauce
  • 1 TBS Soy Sauce low sodium

Meat

  • 1 lb Chicken boneless, skinless

Instructions

  1. In a quart size zippy bag measure the Sweet Chili Sauce and the Soy Sauce. Seal the bag and mix well.

  2. Using a kitchen mallet, pound the chicken to a uniform thickness and cut into two pieces.

  3. Place the chicken in the bag with the marinade. Seal and massage to coat.

  4. Place bag on a plate in the refrigerator for 3-23 hours.

  5. One hour before cooking remove from refrigerator and allow to come to room temperature.

  6. Preheat oven to 400°F. Line a baking pan with foil for easy clean-up.

  7. Place chicken in prepared pan and pour the marinade over the chicken.

  8. Bake for 20-25 minutes until the internal temperature reaches 165°F.

  9. Serve with rice and veggies.

Recipe Notes

Make a second batch of marinade to set aside and use as a sauce on your rice and chicken.

This recipe serves two but can be easily scaled to meet your family's needs.
