This simple slow cooker chicken carbonara with linguine is a perfect week night meal the whole family will love.

Ingredients

  • 1 1/2 lbs Boneless Skinless Chicken Breasts
  • 3 cups Chicken stock
  • 8 slices Bacon
  • 1/2 lb Linguine
  • 2 15 oz Alfredo Sauce jars
  • 1/4 tsp Black Pepper
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Place the chicken in the slow cooker. Cover the chicken with the stock. Cook on high 4 hours or low 6 hours.

  2. When the chicken is almost done cooking, cook and chop the bacon. Set aside.

  3. Remove the chicken from the slow cooker onto a cutting board. Chop the chicken into small pieces.

  4. Dump the liquid from the slow cooker.

  5. Return the chicken pieces to the slow cooker. Top with the Alfredo Sauce, Bacon, and Black Pepper. Stir well to combine.

  6. Top with the Mozzarella and cook on high for 30 minutes.

  7. While the Carbonara is cooking, prepare the linguine according to package directions. When pasta is cooked and drained, serve it onto the plates and then cover it with the Carbonara sauce.

  8. Serve with a side salad and some garlic bread.
