Chicken Doritos Casserole

The kids will have fun crushing up the Doritos for this dish!

  • 1 family size bag of Doritos
  • 1-1.5 lbs shredded chicken
  • 1-2 cans of Rotel depending on how spicy you want it
  • 1.5 cans cream of chicken soup
  • 5 lbs Velveeta
  • 2 cups shredded cheddar cheese
  • 8 oz sour cream


  1. Cut Velveeta into cubes.
  2. Place shredded chicken, Velveeta, Rotel, and soup in crockpot.
  3. Mix well.
  4. Cook on high until cheese is melted.
  5. Crush the entire bag of Doritos!
  6. Cover the bottom of a 13x9" pan with 1/3 of the crushed Doritos.
  7. Follow with a layer of 1/2 of the chicken mixture, then 2/3 cup of cheddar cheese.
  8. Repeat the layers 1/3 of the Doritos, 1/2 chicken mixture and 2/3 cup of cheese.
  9. Finish with the last 1/3 of the Doritos and the last 2/3 cup of cheese.
  10. Bake at 350° for 10 minutes or until the cheese is melted.
  11. Serve with a dollop of sour cream.

Recipe Notes

This dish is rather spicy with 2 cans of Rotel so adjust as needed.
