Southwest Dip

This dip is great for picnics or parties. We eat it with crackers or tortilla chips, whichever suits you best.

  • 12 oz frozen loose corn thawed
  • 10 oz can of Rotel drained
  • 2 cups shredded Mexican or Nacho blend cheese
  • 1 1/3 cup mayonnaise
  • 3/4 cup sour cream
  • 1/4 tsp garlic powder


  1. Mix all of the ingredients together cover and chill until serving.
  2. Serve with crackers or tortilla chips.
  3. Make a day ahead of serving to really allow the flavors to meld together.
  4. Keep chilled
