Apple Pie Crepes

Ingredients

Crepe Batter makes 6 Crepes

  • 1/2 cup flour
  • 1 egg
  • 2 egg whites
  • 1/2 cup milk
  • 3/4 cup light vanilla Greek Yogurt
  • 1 tsp almond or pure vanilla extract I used vanilla
  • pinch salt

Apple Pie Filling for 2 Crepes

  • 1 apple thinly sliced
  • 1/4 tsp pure vanilla extract
  • 1 tsp maple syrup
  • pinch cinnamon
  • 6 TBS light vanilla Greek yogurt OR favorite flavor light Greek yogurt OR cottage cheese

Instructions

Crepe Batter

  1. In a blender, combine flour, egg, egg whites, milk, yogurt, extract, and salt.Blend to combine.
  2. Coat a crepe or frying pan well with nonstick cooking spray; heat over medium-high heat. Scoop 1/4 cup batter into pan; swirl pan so batter covers bottom of pan. Cook until edges are brown and seem crispy. Slide a spatula under crepe and flip it. Cook for a few seconds on the second side and flip onto plate.
  3. Turn off heat; spray pan well again. Repeat with remaining batter.

Apple Pie Filling

  1. Coat a frying pan with nonstick cooking spray. Add apples and cook over medium-low heat until beginning to turn golden, about 4 minutes. Add vanilla, syrup, and cinnamon; cook for 1 more minute.
  2. To assemble place 3 TBS of yogurt or cottage cheese down the center of each crepe. Top with apples. Fold closed. Dust with additional sweetener if desired.

Recipe Notes

1. I used my Ninja Nutri Bowl to mix the ingredients.
2. You can make crepes ahead of time and freeze them with parchment paper between them.
3. Have other fresh fruit cut up and ready to stuff into the other 4 crepes, or triple the filling recipe.
