Pesto Chicken

  • 4 boneless skinless chicken breasts
  • 1 TBS olive oil
  • 3 TBS pesto
  • 8 thin slices mozzarella cheese


  1. Pre-heat the broiler.
  2. Pound chicken breasts to flatten slightly.
  3. Heat oil in a nonstick skillet.
  4. Add chicken and sautee over medium-high heat until browned on both sides, about 10 minutes.
  5. Transfer to a broiler pan.
  6. Divide pesto among chicken breasts, spreading almost to the edge.
  7. Top with cheese slices and grill just until cheese has melted.
