In a quart size zippy bag measure the Sweet Chili Sauce and the Soy Sauce. Seal the bag and mix well.
Using a kitchen mallet, pound the chicken to a uniform thickness and cut into two pieces.
Place the chicken in the bag with the marinade. Seal and massage to coat.
Place bag on a plate in the refrigerator for 3-23 hours.
One hour before cooking remove from refrigerator and allow to come to room temperature.
Preheat oven to 400°F. Line a baking pan with foil for easy clean-up.
Place chicken in prepared pan and pour the marinade over the chicken.
Bake for 20-25 minutes until the internal temperature reaches 165°F.
Serve with rice and veggies.
Make a second batch of marinade to set aside and use as a sauce on your rice and chicken.
