Taco Rice is a versatile dish brimming with Mexican flavor. It can be and entree, side dish, dip, or served on a taco bar!

Ingredients

  • 1 lb ground beef
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1 1/4 cups white rice uncooked
  • 1 pkg taco seasoning
  • 3 1/2 cups chicken broth

Instructions

  1. Place the ground beef n your large skillet or saute pan, add the salt and pepper on top of the meat.

  2. Turn the burner to medium-high heat and cook and crumble the meat until no pink is left.

  3. Reduce heat to medium, do not drain grease.

  4. Add the taco seasoning and rice to the meat and mix together.

  5. Pour in the chicken broth and stir.

  6. Bring to a boil then cover and reduce heat to low.

  7. Cook for 25 minutes, until rice is tender, stirring occasionally.

  8. Serve as an entree with a queso drizzle, with tortilla chips as a dip, as a side to grilled meat, or as an additional topping on your taco bar!
