 I pulled together a delicious new recipe out of items already in my pantry and freezer and I'm calling it Crockpot Pesto Chicken.

Ingredients

The Beginning

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz pesto I use jarred
  • 1/2 stick butter sliced

45 Minutes Before Serving

  • 1 lb tri-color rotini
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded Mozzarella

Instructions

  1. Place chicken on bottom of crockpot, season with salt and pepper.

  2. Using the back of a spoon, spread all of the pesto over the chicken.

  3. Place the butter slices on top of the pesto covered chicken.

  4. Cover and cook on low for 5 hours.

  5. When the chicken has cooked for 4 1/2 hours, cook the tri-colored rotini according to the instructions on the box, and drain.

  6. Using 2 forks, shred the chicken in the crockpot.

  7. Add the Parmesan cheese and the rotini to the crockpot and mix well.

  8. Sprinkle the Mozzarella cheese over the top of everything in the crockpot.

  9. Cover and cook for 15 more minutes. Serve with a salad and garlic bread.

Recipe Notes

You can use whatever pasta you have on hand.
