Bacon Cheeseburger Soup

Ingredients

  • 2 lbs cooked ground beef
  • 12 oz bacon cooked and chopped into small pieces
  • 6 medium potatoes peeled and diced
  • 8 oz cream cheese softened and cubed
  • 48 oz chicken broth
  • 2 Tbs dried minced onion
  • 1 Tbs dried minced garlic
  • 2 tsp salt
  • 1 tsp pepper
  • 2 cups of milk
  • 1/2 cup of flour
  • 3 cups of shredded sharp cheddar cheese divided
  • 14.5 oz can diced tomatoes drained

Instructions

  1. Place the cooked beef, bacon, potatoes, cream cheese, onion, garlic, salt, pepper, and chicken broth into the crockpot.
  2. Cook on low for 6 hours.
  3. In a bowl, whisk together the flour and milk. pour the mixture into the crockpot.
  4. Add 2 1/2 cups of cheddar cheese.
  5. Stir gently.
  6. Cook for another hour on low.
  7. Serve with reserved cheese sprinkled on top.
