Caramel Banana Poke Cake

This easy and delicious caramel banana poke cake is perfect for an afternoon or evening snack.

Ingredients

Cake

  • 3 bananas sliced
  • 4 eggs
  • 1/2 cup butter softened
  • 1 1/2 cups sugar
  • 1 cup sour cream
  • 2 cups flour
  • 1 tsp baking soda

Caramel Sauce

  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Spray a 10" Bundt pan with nonstick spray.
  2. Preheat oven to 350°.
  3. In a large bowl cream together the butter and sugar.
  4. Beat in the eggs one at a time.
  5. Add in the bananas, sour cream, and baking soda; beat until smooth.
  6. Mix in the flour.
  7. Pour batter into prepared pan.
  8. Bake for 60 minutes-until toothpick comes out clean.
  9. Cool in pan for 10 minutes, then remove from pan and place on wire rack over a baking sheet.
  10. Using a skewer, poke holes around the top of the cake, going at least halfway down.
  11. Pour the caramel sauce over the top of the cake and into the holes.
  12. Allow the sauce to also drip down the sides of the cake.
  13. Cool completely and serve.

Caramel Sauce

  1. In a sauce pan mix together the brown sugar, milk, and butter.
  2. Bring to a gentle boil and cook until thickened.
  3. Remove from heat and stir in vanilla extract.
  4. Immediately pour over cake as instructed above.
