Peppermint Cheesecake Swirl Brownies

Ingredients

  • 1 Brownie mix
  • ingredients to make brownies as directed on box
  • 8 oz cream cheese softened
  • 1/3 cup sugar
  • 1/2 tsp Peppermint extract
  • 1 egg
  • 1 egg white
  • 1 TBS flour

Instructions

  1. Preheat oven to 350.
  2. Line an 8×8 inch pan with foil and spray well with cooking spray.

Cheesecake Batter

  1. Cream together cream cheese and sugar until smooth.
  2. Add sugar and peppermint and mix well.
  3. Add egg and egg white and mix.
  4. Stir in flour.
  5. Set batter aside.

Brownie Batter

  1. Mix batter as instructed on the box.

Assembling

  1. Using a 1/2 cup measuring cup, scoop out 1/2 cup of brownie batter and set aside.
  2. Pour the rest of the brownie batter into the prepared pan.
  3. Spread cheesecake layer evenly on top of brownie layer.
  4. Drop tablespoons of reserved brownie batter on top of cheesecake layer.
  5. Use a knife to swirl batter.
  6. Bake about 25 minutes, until top is set.
  7. Allow to cool completely before cutting into bars.
  8. Store in airtight container, keep refrigerated.
