										<content:encoded><![CDATA[<p>I&#8217;m so excited that fall is almost here! I love to bake but it is often just too hot to bake in the Florida summer heat. As soon as temps are no longer in the 90s every day, I am ready for baking, college football, and hot cocoa. When I was asked to review a magazine called &#8220;Fall Baking 105 Recipes to Warm Your Heart&#8221; I couldn&#8217;t pass it up. There are so many recipes in this magazine that I want to bake! I started with the Caramel Apple Streusel Pies but I can&#8217;t wait to make the triple-chocolate crackle crunch cake, the banana caramel layer cake, and the cookies &amp; cream cake, just to name a few!</p>

<h2>Caramel Apple Streusel Pies Recipe</h2>
<p>I want to start off by saying this recipe is easy, but time consuming. There is 60 minutes of refrigeration time, 15 minutes of freezer time, 22 minutes of cooling time, and 37 minutes of baking time! Don&#8217;t be discouraged by this but be prepared. The recipe card can be found below.</p>
<h3>Ingredients</h3>
<p><strong>Pastry</strong><br />
1 1/4 cups all-purpose flour<br />
1/4 cup light brown sugar, firmly packed<br />
1 stick butter, chopped<br />
1 egg yolk<br />
2 tsp ice water<br />
<strong>Filling</strong><br />
12 1/2 oz apple pie filling<br />
1 TBS heavy whipping cream<br />
<strong>Streusel topping</strong><br />
1/3 cup self rising flour<br />
1/3 cup all-purpose flour<br />
1/3 cup light brown sugar, firmly packed<br />
1/2 tsp ground cinnamon<br />
5 TBS cold butter, chopped<br />
<strong>Decoration</strong><br />
2 tsp confectioner&#8217;s sugar</p>
<h3>Directions</h3>
<p><strong>Pastry</strong><br />
Process flour, sugar, and butter until crumbly. Add egg yolk and enough of the water, processing until ingredients come together. Knead dough on a floured surface until smooth. Enclose pastry in plastic wrap, refrigerate 30 minutes.</p>

<p>Grease a 12-hole (half cup) muffin pan. Roll pastry between sheets of parchment paper until 1/4-inch thick. Cut 3 1/4-inch rounds from pastry, press rounds into pan holes. Prick base of cases well with fork. Refrigerate 30 minutes.</p>

<p>Preheat oven to 350°. Bake the pastry shells for about 12 minutes. Cool.</p>
<p><strong>Streusel Topping</strong><br />
Process flours, sugar, cinnamon, and butter until combined. Roll dough into a ball, enclose in plastic wrap; freeze about 15 minutes until firm.</p>
<p><strong>Filling</strong><br />
Combine apple pie filling and cream in a medium bowl.</p>

<p><strong>Assemble</strong><br />
**NOTE**The recipe in the magazine does not say to use muffin liners. The picture in the magazine shows muffin liners. Since the pastry is just a disc on the bottom and it doesn&#8217;t go up the sides to hole the apple filling in place. I chose to pop the baked pastry discs out of the pan, add paper muffin liners and then pop the pastry discs back in before assembling the pies. This worked ok. Next time I will use my silicone muffin liners.**</p>

Spoon the apple pie mixture into the pastry shells. Coarsely grate the streusel topping over the apple mixture. Bake pies about 25 minutes. Let stand 10 minutes before serving; dust with confectioner&#8217;s sugar.</p>
