										<content:encoded><![CDATA[<p>Cinco de Mayo is just around the corner, and even though most Americans don&#8217;t even know the history of this day it is widely celebrated, especially in the southwest and southern states. Cinco de Mayo celebrates the victory of the small Mexican army over the powerful French army at Puebla during the French invasion. This win, albeit small was a source of much needed pride and unity for the Mexican people. Today, Cinco de Mayo is celebrated in the US and in parts of Mexico as a day of Mexican culture, heritage and pride.</p>
<p>I thought I&#8217;d add a family favorite Mexican recipe today, in case you need something new and different for this year&#8217;s Cinco de Mayo celebration. I originally found this recipe on <a href="http://3boysandadog.com/2013/04/beef-and-salsa-casserole-for-cindo-de-mayo/" target="_blank"><strong>3 Boys and a Dog</strong></a>.</p>

I had never thought of making it at home until a few years ago when a friend made it for a dinner party. He is a very good cook and he used a recipe off of The Food Network&#8217;s website. For some reason cooking prime rib seemed like it should be complicated&#8230;well, it isn&#8217;t!</p>
<p>About 6 weeks ago I received a beautiful, large rib roast in my box from the food pantry. I popped it in my freezer and then headed to Pinterest to look for ways to cook this 6 pound beauty. I pinned a few recipes and then waited for the right time to create my version of this recipe. We were having our friends over for dinner one Sunday night so that is when I made my version of <a href="http://thepioneerwoman.com/cooking/2011/12/prime-rib/" target="_blank" rel="nofollow"><strong>The Pioneer Woman&#8217;s Prime Rib</strong></a>. In her recipe Ree uses things like sprigs of Rosemary &amp; Thyme as well as Tri-colored peppercorns. Since I am all about easy recipes, I just pulled the Rosemary, Thyme and Black Peppercorns out of my spice cabinet.</p>

										<content:encoded><![CDATA[<p>The first time I tried Mongolian Beef was at the 2012 Disney Social Media Moms Party that was held at the <a href="http://themommaven.com/2012/06/disney-social-media-moms-day-3/" target="_blank"><strong>Art of Animation Resort</strong></a> before the resort opened to the public. I was quickly addicted. I can&#8217;t remember how many times I got into the buffet line to get more beef but I&#8217;m thinking it was 5 or 6! I was hooked. Since that time I have eaten Mongolian Beef at a few other places but none of them compare to the deliciousness of the Mongolian Beef at that party! While searching Pinterest for easy recipes I found this pin for <a href="http://www.pinterest.com/pin/94575660899131120/" target="_blank" rel="nofollow"><strong>Easy Crockpot Mongolian Beef</strong></a> and it instantly was re-pinned to my &#8220;<strong><a href="http://www.pinterest.com/mommaven/recipes-i-want-to-try/" target="_blank" rel="nofollow">Recipes I want to Try</a>&#8220;</strong> board.</p>

We all enjoyed this meal and Aaron loved it and said it was one of his favorites. This was also my first time cooking Asian noodles and once the water is boiling the noodles cooked up in about 3 minutes!
