On Christmas Eve, after church we head to my in-laws house for dinner and gifts. This year I was in charge of the main dish for the 7 of us. I had a large pork shoulder in my freezer that I had gotten from the food pantry so I decided to figure out how to cook it. After much searching online for a recipe that wasn’t for pulled pork, I found this Pork Roast Recipe. It looked easy enough and I needed easy on Christmas Eve, so I went to the store to pick up the ingredients and planned to get it cooking early Christmas Eve morning.

I wanted the roast cooking by 7:30am so I got up, ready to prep it when I ran into a problem…the roast didn’t fit in my round crockpot! I was having a mini panic attack so I got hubby out of bed and he was able to cut some of the meat off and make it fit. Thank you Ron!

The roast cooked all day and we picked up the crockpot after church and brought is to the in-laws. Hubby sliced up what wasn’t falling off the bone and we all enjoyed a delicious dinner. We were so busy getting the meal on the table that I forgot to take a picture. Here is my plate after 2 helpings plus several sides
