I love the other one pot meals I make so it was time to come up with another one. Since Cinco de Mayo is right around the corner I decided it was time to try an idea that’s been kicking around in my brain for a while now, Taco Pasta. It is all that taco-y goodness with everyone’s favorite…pasta! I cooked this entire meal in my Calphalon Saute Pan which made for super easy clean up.
This recipe was a huge hit! It will become a regular in our monthly meal planning rotation for sure. I love that this recipe can be whipped up in under 45 minutes and that it dirties only one pot. It is a perfect busy weeknight meal for the whole family.

- 1 pound ground beef
- 2 1/2 cups water
- 1/4 cup taco seasoning
- 1 cup salsa
- 8 oz rotini pasta uncooked
- 2 cups shredded Mexican cheese blend
In saute pan, cook and crumble the ground beef until fully cooked. Drain any grease.
Add the water, taco seasoning and the salsa to the ground beef and mix well. Add the pasta and mix again.
Bring to a boil.
Reduce heat to simmer and cover. Cook for 20 minutes or until pasta is tender, stirring occasionally.
Mix in the cheese and stir until melted.
Serve with a salad.
