I didn’t write out my monthly meal plan for May! <gasp> When I don’t menu plan dinner time can be a bit dicey and we end up eating out much more than usual. This month was no exception but, since it is my birthday month, I had a lot of FREE meal/dessert/appetizer coupons in my email box and we used a lot of them. Not having a meal plan I usually end up being creative, last minute, with the items I have on hand. That is how Spaghetti Lasagna Casserole was created.
I had leftover cream cheese from all of my cheesecake making as of late. Add to that some pasta, tomatoes, sour cream, cheese, and spices and voila, dinner is served. It really is that easy to whip up this pasta casserole.
Made with ground beef and kitchen staples, this Spaghetti Lasagna Casserole packs a bit of a spicy punch!
- 3/4 lb spaghetti
- 1 lb ground beef
- 1 tsp onion powder
- salt and pepper
- 28 oz crushed tomatoes
- 1 1/2 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes or less if desired
- 1/2 cup cream cheese whipped
- 1/2 cup sour cream
- 1/2 cup cheddar cheese shredded
- 1/2 cup Monterey Jack cheese shredded
Preheat oven to 350° F.
Spray a 9×13" pan with nonstick spray. Set aside.
Prepare spaghetti following instructions on box.
While spaghetti is cooking, brown and crumble ground beef in skillet over medium heat. Add in onion powder, salt, and pepper while cooking.
Drain excess fat from meat and return to stove top, turning temperature to simmer.
Stir in tomatoes, red pepper, and Italian seasoning and let simmer.
In a small bowl, mix together the cream cheese and sour cream.
When spaghetti is done cooking, drain it and then place it in the prepared 9×13" pan.
Top the spaghetti layer with the cream cheese mixture.
Sprinkle the cheeses on top of the cream cheese mixture.
Place in the oven and bake for 20 minutes.
Serve with salad and garlic bread. Enjoy!
