The combination of milk chocolate, marshmallow, and graham cracker is a favorite flavor combo of mine. You can tell if you search “S’mores” in my search box, I have several recipes. Today I’m sharing my scratch S’mores Brownies Recipe.
I made this recipe for our family’s Welcome Harmony party last month. In case you don’t know, Harmony is my, now 7 week old granddaughter. While all the local family had met her, my sister-in-law who live 5 hours away, hadn’t. She was coming down for a weekend visit so we decided to have a little party, and I was asked to bring dessert.
At our last family gathering I was talking about this recipe that was dancing around in my head. Both Savannah and Hayleigh said it sounded delicious, so I decided to make it for this party. It was a huge hit!
S’mores Brownies Ingredients
Crust
- 2 pkgs about 18 full graham crackers
- 1/2 cup sugar
- 6 TBS butter
Brownies
- 2/3 cup unsweetened cocoa powder
- 1 cup flour
- 1 3/4 cups sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 cup butter
- 4 eggs room temperature
- 2 tsp vanilla
Marshmallow Layer
- 2/3 cup unsweetened cocoa powder
- 1 cup flour
- 1 3/4 cups sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 cup butter
- 4 eggs room temperature
- 2 tsp vanilla
S’mores Brownies Instructions
- Line a 9 x 13″ pan with parchment paper. Set aside.
- Preheat oven to 350° F.
Crust
- Melt butter in microwave safe bowl.
- Place the graham crackers in a food processor, I use my Ninja Duo, pulse until finely crushed.
- Pour the graham cracker crumbs, butter, and sugar into a medium mixing bowl and combine well.
- Press the crust into the prepared pan. Set aside.
Brownies
- Melt the butter in a microwave save bowl, set aside to cool a bit.
- Using a large strainer, sift together the cocoa powder, flour, sugar, salt, and baking powder into a medium bowl.
- In a large bowl, beat together the eggs and vanilla.
- Pour the butter into the egg mixture and continue beating.
- Slowly incorporate the dry ingredients into the wet ingredients while beating.
- When well mixed, pour the brownie batter into the pan, on top of the crust.
- Bake for 20-22 minutes.
- Remove from oven. Turn oven to broil.
Marshmallow Layer
- Top with chocolate chips and marshmallows.
- Place brownies under broiler for 2-3 minutes until the marshmallows turn golden brown.
- Allow to cool, then slice and enjoy.

You can use a box mix of brownies if you prefer.
