I love spaghetti carbonara! I told you all about my love for it when I shared my Simple Spaghetti Carbonara recipe a while back. That recipe is still one of my all-time favorites. Ron likes it but complains that there isn’t enough meat in it, so today I bring you Simple Slow Cooker Chicken Carbonara with Linguine.
This is a knock off carbonara, as are most American carbonara, because it is made with jarred Alfredo sauce and bacon instead of Pecorino Romano, egg, guanicale (pork jowl), and black pepper.
This slow cooker chicken carbonara with linguine recipe starts by cooking your chicken in the slow cooker following my recipe here. Instead of shredding the chicken after it has cooked for four hours, you chop it up. Then place the chicken pieces back in the slow cooker with the Alfredo sauce, black pepper, and cheese. Cook another 30 minutes on high to let the flavors meld and the cheese melt. During this time you can cook the pasta and the garlic bread and put everything together when it is ready.
This simple slow cooker chicken carbonara with linguine is a perfect week night meal the whole family will love.
- 1 1/2 lbs Boneless Skinless Chicken Breasts
- 3 cups Chicken stock
- 8 slices Bacon
- 1/2 lb Linguine
- 2 15 oz Alfredo Sauce jars
- 1/4 tsp Black Pepper
- 1 cup Shredded Mozzarella Cheese
Place the chicken in the slow cooker. Cover the chicken with the stock. Cook on high 4 hours or low 6 hours.
When the chicken is almost done cooking, cook and chop the bacon. Set aside.
Remove the chicken from the slow cooker onto a cutting board. Chop the chicken into small pieces.
Dump the liquid from the slow cooker.
Return the chicken pieces to the slow cooker. Top with the Alfredo Sauce, Bacon, and Black Pepper. Stir well to combine.
Top with the Mozzarella and cook on high for 30 minutes.
While the Carbonara is cooking, prepare the linguine according to package directions. When pasta is cooked and drained, serve it onto the plates and then cover it with the Carbonara sauce.
Serve with a side salad and some garlic bread.
