For 23+ years there has been a food battle going on in my home. I like Shepherd’s Pie and my husband does not. Aaron likes it, Jordan does not. This means that I have probably made it only 3-4 times over the course of my marriage. I was thinking about Shepherd’s Pie the other week, yet knowing I couldn’t make it for just hubby and I. Then we were out at a restaurant that serves several types of loaded French fries. The light bulb went on and I set out to create a new kind of Shepherd’s Pie that just maybe, my husband would eat.

- 28 oz Crinkle Cut French Fries
- 1 lb Ground Beef
- 6 oz Tomato Paste
- 8 oz Beef Broth
- 1/8 tsp minced onion
- 1/8 tsp garlic powder
- 8 oz Frozen Loose Corn thawed
- 4 oz Shredded Cheddar Cheese
- Bake the French Fries in the oven according to the package instructions.
- As the fries bake, brown the ground beef in a skillet with the minced onion and garlic powder.
- Drain the grease from the meat.
- Add the broth, corn and the tomato paste to the meat. Bring to a simmer. Cook until the sauce is slightly thickened.
- When the fries are done, remove them from the oven and make sure the oven temperature is at 400°.
- Place the fries in a 9x13" baking dish and season with salt and pepper.
- Top the fries with the meat mixture.
- Sprinkle the cheese on top and bake for 5 minutes.
I am pleased to say that my husband did like this recipe more than traditional Shepherd’s Pie, though it still isn’t one he wants in the regular meal plan rotation. I thought it was pretty good, though next time I might add more cheese 🙂
I don’t know if Jordan would eat this or not since he doesn’t like his foods to touch on his plate, let alone mix them together. I am pretty sure Aaron would like it though. What do you think?
