I have an addiction to peppermint. I love to cook and bake with it and I have an entire Peppermint Pinterest Board! Over the years I have made a lot of peppermint bark, it is so easy to make and everyone loves it. This year I thought I’d try a Peppermint Bark Popcorn, I figured it would be a great sweet and salty combination.
I made a batch and brought it to church for our Kid’s Clubs snack. I separated it into a bowl for the Stars Club and one for the Royal Rangers. I came home with 2 empty bowls and an order for a batch to be brought to a Christmas party! This recipe is so easy and delicious. You can make it up in bulk and the kids can help. Then just portion it into containers or bags and give it as gifts, use as party favors or just put it in a big bowl and share it at a party.
- 2 quarts popped popcorn-no butter
- 12 oz white chocolate chips
- 1 1/2 cups semi-sweet chocolate chips
- 1 1/2 tsp peppermint extract
- 8 candy canes-crushed
- Place the popcorn in a large bowl, set aside.
- In a double boiler, melt the white chocolate chips.
- Add the peppermint extract to the melted chips and stir.
- Pour the white chocolate mixture and half of the crushed candy canes over the popcorn and mix well.
- Spread the popcorn out on a table or counter covered with parchment paper to cool.
- In a double boiler, melt the semi-sweet chocolate chips.
- Drizzle the warm chocolate over the popcorn.
- Sprinkle the rest of the candy canes onto the popcorn.
- Let the popcorn sit for about an hour to cool and harden.
I live in a warm, humid climate. My chocolate wouldn’t harden so I had to move the popcorn on baking sheets into the freezer for about 15 minutes to get it to harden.
