Way back in the day, I used to make those boxed pasta salads for family and church picnics. Then, one day I saw the light of how easy it would be to make my own. I have been making pasta salad my way for years. I taught Jordan to make it and for a long time it was known at family gatherings as “Jordan’s Pasta Salad”. Well, Jordan has been on the road as a missionary for the last 2 years so pasta salad making has been placed on my to-do list again. While I was thinking about making pasta salad for our family Labor Day cookout/pool party, I decided to shake it up a bit and create a pasta salad bar. This way each of us could choose what we wanted in our pasta salad. This dish is simple to make and there are seldom leftovers!

Create a Pasta Salad Bar for your next gathering

This easy pasta salad is a great side dish to compliment everything from burgers and hot dogs to a great big steak.

Ingredients
  • 1 bag/box macaroni I use Wacky Mac (see link in blog post)
  • 1 bottle Italian dressing I use Wish Bone Robusto Italian
  • 12 cherry tomatoes quartered
  • 1 bag/box croutons
  • 1 small can sliced olives
  • 1 pkg mini-pepperoni
  • 1 pkg Feta cheese crumbles
  • Grated Parmesan cheese
Instructions
  1. Cook the pasta according to package directions.
  2. Drain well.
  3. Pour pasta into the serving bowl.
  4. Add 1 cup of Italian dressing and mix well, until all noodles are coated.
  5. Cover and chill at least 2 hours.
  6. When you are ready to serve place the tomatoes, croutons, olives pepperoni and cheese in individual bowls alongside the pasta salad. Some people like extra Italian Dressing so have that available too.
  7. Voila! You have a pasta salad bar.

As I said in the recipe, I use Wacky Mac, Enriched Tomato, Beet & Spinach Macaroni, Veggie Spirals in my pasta salad. I like that they are veggie pasta and a bit healthier than regular pasta.

My pasta salad bar was a huge hit at our Labor Day gathering…even if the pool party part of our plans was rained out.     My mother-in-law sent me a recipe for pasta salad this morning. Trouble is I’m not a huge fan of artichokes, the featured ingredient. I’m loving the idea of fixing it however suits you.

    Hm, I never thought of separating the salad – but it makes sense in case some really despises olives or something. Great idea.
