For years I’ve seen recipes on Facebook for Melt In Your Mouth or (MIYM) Chicken on Pinterest, but I’d never tried it. The other day I decided to read several recipes and then take the best bits and make my own version of Melt in Your Mouth Chicken..

This chicken is easy to make and yes, it melts in your mouth. I couldn’t call it Melt in Your Mouth Chicken if it didn’t! Could I?

This recipe serves 4 people. Since it’s just Ron and I at home now, I actually made half of this recipe and it worked very well. Feel free to scale it to feed your family.

This chicken recipe is easy to make and yes, it melts in your mouth.

Ingredients
  • 1 1/2 lbs boneless, skinless chicken breast
  • 3/4 cups sour cream
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 3/4 tsp seasoned salt
  • 1 1/2 cups shredded Parmesan cheese divided
Instructions
  1. Preheat oven to 350° F. Lightly spray a 9 x 13″ baking pan with non-stick spray.

  2. Trim chicken breasts of fat and pound down to 1/2-3/4″ thickness.

  3. Cut the chicken into 4 portions. Place in the baking pan.

  4. In a medium bowl, mix together the sour cream, garlic powder,  black pepper, seasoned salt, and 1 cup of Parmesan cheese.

  5. Spread the sour cream mixture over the pieces of chicken.

  6. Sprinkle the remaining Parmesan cheese on top of the chicken.

  7. Bake for 25-30 minutes, until internal temperature reaches 165°.

  8. Change the oven to broil and cook for another 3 minutes, til cheese is lightly browned.

  9. Enjoy
