One of my favorite spring and summer fruits is watermelon. No one else in my family is a fan of this delicious fruit so I usually get the pre-cut up containers in the Publix produce section because I know they do it right there and it is always fresh. It is so good for you too, it is only 40 calories per cup and it has lots of nutrients, including the powerful antioxident lycopene which has anti-inflammatory properties. Fresh from Florida watermelon is in season from April-July making it a perfect spring and summer treat.
In Florida we are so blessed with many hard working farmers who supply us with lots of fresh fruits and vegetables all year round. There are literally several crops in season any given month of the year. Right now, along with watermelon, bell peppers, blueberries, and sweet corn are all in season. I purchased my watermelon at Publix and it is right from Indian Hills Produce in Groveland, Florida. The watermelon was bigger than I needed for this recipe but I cut the rest up and I am enjoying it as a refreshing afternoon snack.
Grilled and Chilled Florida Watermelon with Feta and Mint is a perfect addition to any spring or summer party. This recipe is from the Fresh from Florida website.
- 1 small Florida watermelon about 6 pounds
- 1/2 cup small mint leaves hand torn
- 2 oz Feta cheese crumbled
- 1 TBS olive oil
- 1 TBS balsamic vinegar
- sea salt to taste
- black pepper to taste
Slice watermelon into 1 inch thick slices.
Heat a grill or grill pan over high heat until very hot.
Two at a time, grill watermelon rounds about 2-3 minutes on each side until charred.
Transfer watermelon to a cutting board and cut into wedges, discard the rind.
Place watermelon wedges in the refrigerator until chilled.
Arrange wedges on a plate. Sprinkle with mint and feta. Drizzle with oil and vinegar then sprinkle with sea salt and pepper,
I chose to keep the rind on, it makes it easier to pick up and eat without needing utensils.
I love pairing watermelon and feta together, the addition of the mint and the oil & vinegar made this a really refreshing and delicious bite.
