Way back, right before things got crazy with the Wuhan Virus, we were living through Wonka week. Woodland Fine Arts Academy Select Troupe performed their Willy Wonka music March 12-14th and we had tech/dress rehearsals the 7th, 9th, 10th, and 11th. Myself, Ron, and Jordan are the tech crew and Savannah is the assistant stage manager. Jordan and Savannah both work full time at Woodland so on Tuesday night I brought dinner for all of us and I made Fiesta Chicken with Pasta.

I baked it in my 2 quart Pyrex baking dish with lid to make it easier to transport. I brought paper plates and plastic utensils to make clean-up a breeze. We arrived early so the kids could join us and eat before we all had to get ready for tech rehearsal. It was wonderful to eat a home cooked meal since show week is often filled with pizza and fast food. This easy recipe takes less than an hour to prepare and it serves 8 people so there is plenty to go around.

I’m finally sharing this recipe now because it is an easy recipe for Cinco de Mayo and is made with mostly pantry staples. This recipe does call for 2 cups of cooked and chopped chicken. I always recommend having some in the freezer, just use my shredded chicken recipe and cube it instead. Then fill freezer bags with 2 or 3 cups of chicken and then all you have to do is defrost it before adding it to your next casserole.

In addition to the chicken this recipe calls for half a box of angel hair pasta, two cans cream of chicken soup, one cup of salsa, 1 cup of sour cream, 2 cups shredded Mexican cheese blend, and two tablespoons of taco seasoning.

This Fiesta Chicken and Pasta recipe satisfying to the tummy. The combination of chicken, pasta, cheese, spices makes for a great meal.

This Fiesta Chicken with Pasta dish is Mexican comfort food. Loaded with chicken, pasta, cheese, and spices your belly will be full and your mouth will be happy when you finish this dish.

Ingredients
  • 8 oz Angel Hair Pasta
  • 2 cups Chicken cooked and chopped
  • 2 10 oz Cream of Chicken Soup
  • 2 TBS Taco Seasoning
  • 1 cup Salsa
  • 1 cup Sour Cream
  • 2 cups Mexican Cheese Blend
Instructions
  1. Preheat oven to 350° F.

  2. Spray a 9 x 13" baking dish with nonstick spray, set aside.

  3. Cook pasta according to package directions.

  4. Drain pasta and place it back in the pan.

  5. Add the chicken and taco seasoning to the pan and mix well.

  6. Add the soup, salsa, sour cream, and 1 cup of the cheese to the pan and mix well.

  7. Pour the mixture into the prepared pan.

  8. Top with the remaining cheese.

  9. Cover with aluminum foil that has been sprayed with nonstick spray.

  10. Cook for 25 minutes, until cheese is bubbly.

Recipe Notes

Follow the recipe exactly the first time you make it. On subsequent cookings you can adjust the taco seasoning up or down to suit your family’s taste.
