As I hung out on Pinterest the last few weeks I have seen multitudes of Valentine’s Day cookie recipes. Many of them were elaborate and included making sugar cookie dough or shortbread dough from scratch. I have done that…in the past. Now I am all about easy recipes. I don’t want busy moms to feel that they have to be the perfect June Cleaver and slave away in the kitchen all day when there are easy, affordable shortcuts they can take.
For all 3 recipes I used Pillsbury sugar cookie dough, which was on sale at Publix for 3/$6.00. I bought a multipack of sprinkles at Target for about $4.00 and a can of frosting with sprinkles also at Target for less than $2.00. I had the heart shaped cookie cutters I bought them last year in the 90% off bin at CVS a week or so after Valentine’s Day.
Here’s is a new-to-me trick for rolling out cookie dough, and it worked so well: Cut a piece of parchment paper to fit your baking sheet, place the dough in the middle, cover with another sheet of parchment paper and roll out the dough with a rolling pin. Then remove the top piece of parchment and cut out the cookies, removing the waste into a pile to roll for the next cookie sheet. One the parchment is full, lift it onto the cookie sheet and bake. I saw this somewhere on line, I thought I pinned it so I could credit the source but I can’t find it!
Easy Recipes-Sugared Sugar Cookie Cut Outs
This is easy peasy. Roll out the dough, cut out hearts, place on baking sheet, sprinkle with colored sugar and bake according to the directions on the package. Let them cool on the pan for about 5 minutes before removing them to a rack to cool completely.
Easy Recipes-Sprinkled Sugar Cookies
These cookies are easy because you don’t even have to cut them out! In a bowl, pour your large Valentine sprinkles. Roll a spoonful of dough into a small ball. Roll the ball around in the sprinkles. Place the ball on a parchment paper covered cookie sheet and press down on the ball to flatten it some. Bake according to the directions on the package. Let them cool on the pan for about 5 minutes before removing them to a rack to cool completely.

This cookie is almost a combination of the first two with some frosting added! First roll out dough and cut out cookies, all with the same cookie cutter. Bake according to the directions on the package. Let them cool on the pan for about 5 minutes before removing them to a rack to cool completely. Once the cookies are completely cool, match them up in pairs of similar sizes and shapes. (I used the same heart shaped cookie cutter for these cookies but most of them came out looking like circles not hearts!) Pour sprinkles into a bowl. Spread frosting lavishly on one cookie from each pair. Place the other cookie on top and mash it down so that the frosting comes out the sides. Carefully roll the frosting edges in the sprinkles to make these fancy, sweet treats.
