Until Jordan went on the road with The 99, I didn’t make many casseroles. Jordan doesn’t like it when his food touches so eating a casserole was out of the question for him. This is why I was so surprised when he came home in July and he brought me a recipe for his new favorite meal, Chicken Doritos Casserole. He said his host mom in Tulsa, OK made it and he loved it so he asked her for the recipe. I am so glad that he is trying new foods and new food combinations while he is on the road ministering to the youth of America. I didn’t get to make this for him when he was home, we only had 2 dinners together and both of those were at his favorite restaurants. I have promised him that he would get it a few times while he is home on his winter break. I made it for the rest of the family and it was a hit, so now it is time to share it with you.

Chicken Doritos Casserole

Ingredients

  • 1 family size bag of Doritos
  • 1-1.5 lbs shredded chicken
  • 1-2 cans of Rotel, depending on how spicy you want it
  • 1.5 cans cream of chicken soup
  • .5 lbs Velveeta
  • 2 cups shredded cheddar cheese
  • 8oz sour cream

 

Directions

1. Cut Velveeta into cubes.
2. Place shredded chicken, Rotel, Velveeta and soup into crockpot.

3. Mix well.
4. Cook on high until Velveeta is melted.

5. Crush the entire bag of Doritos!
6. Cover the bottom of a 13×9″ pan with 1/3 of the crushed Doritos.

7. Follow with a layer of 1/2 of the chicken mixture, then 2/3 cup of cheddar cheese.
8. Repeat the layers 1/3 of the Doritos, 1/2 chicken mixture and 2/3 cup of cheese.
9. Finish with the last 1/3 of the Doritos and the last 2/3 cup of cheese.

10. Bake at 350° for 10 minutes or until the cheese is melted.

11. Serve with a dollup of sour cream.

Recipe Notes

This dish is rather spicy with 2 cans of Rotel so adjust as needed.
