Yes, it seems like I am on a cheesecake roll lately. If my Brownie Sundae Cheesecake seemed a bit intimidating to you, I suggest you try today’s recipe instead. This is super easy and delicious. I found this recipe on Pinterest and honestly it looked so easy I wasn’t sure it would taste good but I was wrong. The recipe originally came from the Pillsbury site, so I should have known it would be good.
As I often do, I brought my creation to my guinea pigs, small group to try. The first one to eat it was 7yo Matthew. I wish I had a video camera running when he took his first bite because his reaction was priceless. He leaned his head back…and moaned! LOL! He said it was one of the best desserts I have made and once the rest of us ate it, we all agreed. - 1 16oz ready to bake chocolate chip cookies package (makes 24 cookies)
- 1 8oz cream cheese-softened
- 1 egg
- 1 tsp vanilla
- Preheat oven to 350 degrees
- Grease an 8" square pan
- Press 16 un-baked cookies into the bottom of the pan for the crust
- Cream together the cream cheese, egg and vanilla
- Pour cream cheese mixture on top of the cookie dough
- Break the remaining cookies into small bits and and place on top of the cream cheese mixture.
- Bake for 30-35 minutes, until the edges are golden brown.
- Refrigerate for at least 4 hours
- Cut into small squares and enjoy!
