Back to school time is here. It doesn’t matter if school is happening in person, virtually, or if you homeschool, your weekdays and nights are getting busier. I don’t even have kids at home anymore but I am teaching piano two afternoon/evenings a week and soon we will be adding Wednesday night church classes back into the mix. Life is getting busier as we work our way back to normal. One way to make life easier is with easy dinner recipes like my Easy Creamy Cheeseburger Mac.
Growing up, my mom fed us a lot of Hamburger Helper. I fed it to my kids for years too. Now we have gotten away from the pre-packaged foods and are going back to cooking from scratch but it doesn’t have to be difficult or too time consuming. We have eaten a lot of Valerie Bertinelli’s Hamburger Helpa and now we are also enjoying this Easy Creamy Cheeseburger Mac.
This recipe only takes about 20 minutes from start to finish so it is a great weeknight meal. I serve it with biscuits and a side salad but you do what works for you. You can also use whatever pasta you have on hand. I had a box of Penne on hand, so that is what I used. Maybe I’ll do Rotini next time, or Shells, who knows?
Easy Creamy Cheeseburger Mac
Ingredients
- 1 TBS salt
- 16 oz pasta I used Penne
- 1 lb ground beef
- 1/4 tsp dry mustard
- 1/4 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp seasoned salt Lawry’s
- 8 oz cream cheese
- 2 cups sharp cheddar cheese shredded
- 3/4 cups milk divided
Instructions
- In a large sauce pan bring 6 cups of water, with 1 TBS salt in it to a boil.
- Once the water is boiling, add the pasta to the water and cook following the package directions.
- While the pasta is cooking, in a large skillet or saute pan over medium heat, brown and crumble the ground beef. While the meat is cooking add the mustard, paprika, garlic powder, onion powder, and seasoned salt.
- Once the meat is cooked, drain the grease and place the meat back on the heat.
- Add the cream cheese and stir constantly with a wooden spoon until it is melted then do the same with the cheddar.
- Once the cheese is melted and well combined, add in the milk in 1/4 cup increments, stirring well to make a sauce.
- Drain the pasta and then mix it into the meat and sauce. Serve and enjoy!
Perfect for a busy weeknight, this Easy Creamy Cheeseburger Mac is ready in about 20 minutes and makes about 6 servings so you might even have leftovers!
